My aunt has made these every holiday season for as long as I can remember, and no cookie tray feels complete without them. Buttery, nutty, and dipped in a sweet rum glaze — these little bites disappear faster than anything else on the table.
Butternuts
Cookie Ingredients:
⇒ 170g butter, room temperature, + 1 tbsp (¾ cup)
⇒ 60g powdered sugar (½ cup)
⇒ 1.5g salt (¼ tsp)
⇒ 220g all-purpose flour (1¾ cups)
⇒ 170g butterscotch chips, 1 package (6 oz)
⇒ 115g finely chopped pecans (1 cup)
Rum Glaze:
⇒ 360g powdered sugar (3 cups)
⇒ 45-60ml milk or water (3 to 4 tbsp)
⇒ 5g rum extract (1 tsp)
Topping:
⇒ 55g chopped pecans (½ cup)
Directions:
Cream: Beat the butter with the powdered sugar and salt until light and fluffy.
Blend: Mix in the flour until well combined.
Add Mix-Ins: Add the butterscotch chips and 1 cup of finely chopped pecans, mixing well by hand.
Shape: Roll the dough, a scant teaspoonful at a time, into small balls. Place 1 inch apart on an ungreased cookie sheet.
Bake: Bake at 325°F for 15–20 minutes, until firm but not browned. Let cool on wire racks.
Make the Glaze: Mix the powdered sugar, rum extract, and milk until smooth.
Glaze: Dip the cooled cookies into the glaze, or spoon it over the tops.
Finish: Sprinkle with the chopped pecans and allow the glaze to set before serving.
