Air Fryer Chicken & Vegetable Skewers
Juicy seasoned chicken and colorful vegetables come together in the air fryer for a quick, flavorful meal with deliciously charred edges.
Perfect for a light weeknight dinner, these skewers are easy to prepare and packed with fresh Mediterranean-inspired flavors.
Ingredients
1½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
1 red bell pepper, cut into chunks
1 yellow bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 small zucchini, sliced into thick rounds
1 small red onion, cut into chunks
2 tbsp olive oil
2 tbsp lemon juice
3 cloves garlic, minced
1 tsp dried oregano
1 tsp paprika
½ tsp dried thyme
½ tsp black pepper
¾ tsp salt
Wooden or metal skewers
Instructions
If using wooden skewers, soak them in water for 20–30 minutes.
Add chicken, peppers, zucchini, and red onion to a large bowl.
Whisk together olive oil, lemon juice, garlic, oregano, paprika, thyme, black pepper, and salt.
Pour the seasoning mixture over the chicken and vegetables. Toss well and marinate for 20–30 minutes.
Thread chicken and vegetables alternately onto the skewers.
Preheat the air fryer to 400°F (200°C) for 3 minutes.
Arrange the skewers in a single layer without overcrowding.
Air fry for 12–16 minutes, turning halfway through, until the chicken reaches 165°F (74°C) internally and the vegetables are lightly charred.
Let rest for 2–3 minutes before serving. Finish with a squeeze of fresh lemon if desired.
