Hey everyone! Time to spill some tea! We've been discussing making some rubs to add to our product list, so today is the day!

On the smoker as we speak:

Pork belly bites with a sweet and smoky paprika rub;
A spatchcocked chicken with a blackened seasoning rub; and
A spatchcocked chicken with an herby rub.

There *might* be an opportunity to submit potential names for these as well, so keep an eye out for that post!

Easter Green Beans

These are called Easter Green Beans only because I made them for Easter dinner this year, and not because of any other reason. There is nothing especially Easter-y about them, but this recipe is really easy to scale up for more people!

Ingredients:
1 qt. Green beans
1 Tbsp. minced garlic
1 to 2 Tbsp. Dill-iciously Dill Seasoning
1 stick butter (½c)
1 small sweet onion, very thinly sliced
¼ to ⅓ c Wondra gravy flour*
2 to 3 Tbsp. Good quality balsamic vinegar**
1 c vegetable oil for frying

Drain about half the liquid from the beans. Put the beans and remaining liquid in a 2 qt casserole. Mix in garlic and Dill-iciously Dill Seasoning, cover and bake.

While the beans are heating, melt the butter in a small saucepan over low heat. Continue to heat, watching it closely. Once it starts to foam fine, consistent bubbles, it will quickly begin to brown. Once browned to your liking, remove from heat immediately and set aside to cool slightly.

Toss the sliced onions in the flour (you could add a littlenof the Dill-iciously Dill Seasoning here too!), coating well, and shaking off excess. Heat oil in a large shallow skillet over medium heat. Fry the onions until brown and crispy. Remove and drain on paper towels. Add salt to taste.

Once beans are hot through, remove them from the oven and drain the liquid out. Sprinkle frizzled onions on top, then drizzle with browned butter and balsamic vinegar. Serve and enjoy!

*For recipes like this, I prefer to use Wondra gravy flour, but any flour you normally use is fine. I simply prefer the fine texture of this particular flour.
**This is the balsamic vinegar I used, and it truly elevates this dish beyond what other balsamic vinegars do:

I made some green beans for our family Easter dinner this last weekend using our Dill-iciously Dill seasoning, garlic, frizzled onions (like the French's fried onions, but homemade, and better!), and a drizzle of the amazing 18-year-old balsamic vinegar from Old World Olive Co. I first bought in Grand Rapids a year ago. I *highly* recommend this stuff!

Hey everyone! Lazy L Ranch Meats now has stock of all 13 of our currently available varieties of seasoning blends! Hopefully soon, they will be carrying them on their trucks that sell/deliver Meats door-to-door also!

Hey everyone, Debbi here. I was talking with Rich (my husband) and he thinks maybe some of you may not be following my train of thought when I created Medieval Faire Seasoning.

When I was growing up, my parents loved the song "Scarborough Fair" by Simon and Garfunkle, with the repeated lyrics of "parsley, sage, rosemary and thyme." This is a great combination of flavors, used often in poultry dishes. I have know for quite some time that I wanted to make a seasoning featuring these four herbs, as a nod to my parents, but could obviously not call it Scarborough Fair due to copyright laws.

To make a short story ridiculously long, this is a great seasoning to use on a chicken you are going to roast. Mix with some butter, and smear it over and under the skin, pop it in a roasting pan with some potatoes, onions, carrots, and celery (throw some Medieval Faire on those as well!), and roast it. Make a beautiful gravy with the pan drippings, and you've got an easy and flavorful meal! If you're me, you'd add some nice crusty rolls, fresh from the oven too, but I love carbs way too much, so....... 🤷‍♀️
