Pickling might be my favorite way to handle food waste, but roasting is a close second - especially when there’s cheese involved 😉

These roasted squash “crackers” were SO easy to make - and they tasted pretty dang good, too. Just slice, sprinkle with garlic salt, pepper, and parmesan and bake at 425 til they turn golden !
