Crispy Mashed Potato Pancakes Stuffed with Savory Meat

Ingredients
For the potato mixture
2 cups mashed potatoes (preferably cold)
1 cup all-purpose flour
1 egg
½ teaspoon salt
ÂĽ teaspoon black pepper
1 tablespoon chopped green onions (optional)
For the meat filling
½ lb ground beef
½ small onion, finely chopped
1 garlic clove, minced
½ teaspoon paprika
Salt and pepper to taste
1 tablespoon oil
For frying
Oil or butter
Instructions
1. Prepare the filling
Heat the oil in a skillet over medium heat. Add the chopped onion and cook until soft and translucent. Stir in the minced garlic and ground beef. Cook until the beef is browned and fully cooked. Season with paprika, salt, and pepper. Remove from heat and allow the mixture to cool slightly.
2. Make the potato dough
In a large bowl, combine the mashed potatoes, flour, egg, salt, pepper, and green onions. Mix until everything forms a soft dough. If the mixture feels too sticky, add a little more flour.
3. Shape the pancakes
Take a small portion of the potato mixture and flatten it in your hand. Place a spoonful of the beef filling in the center. Cover with another flattened portion of potato mixture and seal the edges well. Gently press it into a thick pancake shape.
4. Cook the pancakes
Heat oil or butter in a skillet over medium heat. Fry the pancakes for about 3–4 minutes on each side until they become golden brown and crispy.
5. Serve
Place the cooked pancakes on paper towels to remove excess oil. Serve warm with sour cream or your favorite dipping sauce.
