Absolutely wild cook. I lost the tip of my thumb to the mandolin on the first potato of prep- set me back 90 min on the cook- but the Spanish tapas Easter came thru- deviled eggs, tomato toast, Spanish tortilla, med salad, Moroccan chicken skewers, chili garlic shrimp, lamb meatballs, patatas bravas. One of my best showings to be honest. Very proud considering I was playing injured the whole cook. Only 4 bandage changes and 12 gloves. 🥴 Happy Easter.

This might have been the best dough I’ve ever made. It was so light and airy- like biting into a cloud. I decided I wanted pizza (half hamburger half Italian chicken) so made a quick dough 45 min before dinner- same ratios I usually use, 1 1/3 cup water to 3 cups flour 1tbsp salt, 1 pack of yeast. I usually use a dash of some sort of sugar, agave, sweetener in the water to bloom the yeast- this time I used forest honey. I only stretched the dough once 30 min after mixed the stretched to the generously oiled pan 20 min later and let rise before topping and baking at 500° for 15-20. I ate half this sheet - phenomenal

Man I love a Sunday roast. Pork is cheap as hell. Was at the market the other day and they had loins for $1.79lb so I grabbed three 5 pounders- froze two and hatched a plan for this baby. Rubbed with salt, pepper, brown sugar, onion powder, garlic powder, thyme, paprika and bbq seasoning for 24hrs then marinated in a soy and brown sugar glaze for another 24hs. Roasted for 45min at 375° came out perfect. 2 hour gravy, mash, stuffing and greens. A fresh baked bread to accompany (next post).

Marco Pierre White always says, slow down, there’s no rush, the most important ingredient is time. I took 5 hours time today and it was worth every minute. Caramelized a bag of sweet onions with Irish butter, garlic, some brandy and a splash of Worcester, seasoned with salt, pepper, thyme and 90min time. Roasted off a bunch of tomatoes and garlic, then simmered in some vegetable stock in the flavor left behind in the onion pot with some carrot, bay leaf, and a k**b of butter to finish over 3.5 hours. Had a dough rise 4x into an airy and ultra light focaccia that I smothers in three cheeses: Swiss, provolone, and mozzarella, then topped with the onions and some herbs and baked for 30 min. The result was an absolutely heavenly pairing of a soup and cheesy bread perfect for the chill in the air and the much needed vitamin C. I’ve been testing a lot of bread methods recently- this one just really hit the mark. Really proud of this cook, and keeping it on the “future cafe menu” list if I ever head down that road. 👌🏼🍅🥖

November meals- homemade cinnamon apple sauce from the recent orchard haul, paper thin pork cutlets, and crispy caramelized Spanish onion fritters aka tortillitas crujientes de cebolla, a recipe I picked up from which is an absolute 5 star knock out of the park. I haven’t been that wow’d at such a simple, quick recipe in a long time- definitely an ace up my sleeve and will be making lots this autumn! Gracias Albert for the knowledge! I’ll be hitting the website for many more recipes in the future!
