✨ Here’s how you can make homemade jam doughnuts that everyone will love:
Ingredients
For the dough:
11g active dry yeast (1 tbsp)
50g caster sugar, divided (¼ cup)
455g all-purpose flour (3 ¼ cups), divided
180ml whole milk (¾ cup)
½ tsp fine sea salt
2 eggs, beaten and at room temperature
75g butter, cubed and at room temperature (2.5 oz or ⅔ stick)
Frying oil (I used 650ml / 3 cups of peanut oil)
For the coating and filling:
100g caster sugar (½ cup)
½ tsp ground cinnamon
320g raspberry jam (1 cup), not runny
Directions
Make the sponge: Mix yeast, 2 tsp sugar, 105g flour. Warm milk to ~32°C and whisk in. Cover and let rise 30 min until foamy and doubled.
Make the dough: Mix in remaining sugar, salt, 350g flour, eggs, and butter. Knead into a smooth dough.
Knead and rise: Knead 10 min until slightly sticky, smooth, and elastic. Let rise in greased bowl 1h30 until doubled.
Shape balls: Divide dough into 12 pieces (~70g each). Roll into balls, place on floured trays, cover, and let rise 1h until doubled.
Fry doughnuts: Heat oil to 180°C (355°F). Fry 4 doughnuts at a time, 2½ min per side, until golden. Drain on paper towels. Toss in cinnamon sugar while warm.
Fill doughnuts: Make a hole in each side. Using a piping bag, fill with raspberry jam until just oozing.
Serve warm and watch them disappear in minutes! 😋
