**Lemon Butter Salmon & Shrimp Skillet: Coastal Comfort on a Plate**
Bring the taste of the coast straight to your kitchen with this light, heart-healthy, and oh-so-flavorful skillet meal. It’s quick, easy on the cleanup, and perfect for a cozy dinner at home.
**Ingredients:**
• 2 salmon fillets (about 4-6 oz each)
• * 1/2 lb shrimp, peeled and deveined
• * 2 tbsp butter (or olive oil)
• * 2 cloves garlic, minced
• * 1 tbsp fresh lemon juice
• * 1 tsp dried parsley or dill
• * Salt and black pepper to taste
• * Optional: A handful of fresh asparagus spears or baby spinach
**Instructions:**
1. **Season:** Pat the salmon and shrimp dry with a paper towel. Sprinkle both with a little salt, pepper, and your dried herbs.
2. 2. **Sear the Salmon:** Melt 1 tablespoon of butter in a large skillet over medium heat. Place the salmon fillets skin-side down. Cook for about 4–5 minutes until the skin is crispy and the salmon is golden. Carefully flip and cook for another 3–4 minutes until it flakes easily with a fork. Remove the salmon from the pan and set aside on a plate.
3. 3. **Sauté the Shrimp:** In the same skillet, add the remaining tablespoon of butter and the garlic. If you’re using asparagus, add it now and sauté for 2–3 minutes. Add the shrimp and cook for 2–3 minutes until they turn pink and opaque.
4. 4. **Finish:** Stir in the lemon juice, scraping up any tasty bits from the bottom of the pan. Place the salmon back into the skillet for a minute just to warm everything through.
5. 5. **Serve:** Plate immediately, drizzling the extra lemon butter sauce from the pan over the top.
**Serving Tip:** This pairs beautifully with a side of steamed rice, quinoa, or a piece of warm crusty bread to soak up that delicious sauce.
