As promised, here is the recipe for my pizza dough.
In a measuring cup:
1.5 cups of Luke warm water
8grams of active dry yeast (1 packet)
1/2 tsp sugar
Gently mix all ingredients together and let stand for 5 minutes, to let the yeast activate.
In a stand mixer bowl:
3 cups of flour, it’s ok if the cup is not exactly flat at the top, but it should not be heaping.
2tbsp of olive oil, I usually measure by eye, a touch more will not harm the dough.
1 & 1/4 tsp of salt.
Once the yeast has activated, pour over the flour and start your speed on low, usually the very first click on the machine. Mix for 6 minutes. After the 6 minutes click the machine to number two and mix for three more minutes at this higher speed.
Once done mixing, use a bowl scraper and remove all the dough on a floured surface, coat the dough and your hands with flour and knees the dough by hand for three more minutes.
If you want to make individual smaller pies cut the dough into four equal portions and roll into a ball. Place the dough on a lightly oil sheet pan and cover with a clean dish towel for at least one hour at room temp. They will rise and basically double in size. At this point you can stretch and top with you choice of sauce, cheese and toppings.
For a square pie, use a half sheet pan and put a nice amount of olive oil on the pan, I use 1/4 cup. Place the whole uncut dough on the sheet pan and turn it to coat the dough with the oil. Cover with plastic wrap, gently over the top so it does not stick. Let rest for one hour so it can rise. You can leave it longer if you are not ready to cook yet, it will
Not harm the dough. When ready to cook you need to poke the dough down like focaccia and stretch to the size of the pan. Coat it with your sauce and bake till till it starts to turn golden brown. Once you have color around the edges, top with your cheese and toppings and bake till your preferred perfection. Let it rest for a few minutes the cut and eat.
Baking tip, heat your pizza stones in your convection oven at 475 for at least one hour with nothing else in the oven to ensure they are really hot and will bake evenly. Leave the oven at this temp while you are baking your pizzas. I also bake my square pie on the stone, when you are ready for the first bake, place the sheet pan with the sauces pizza on the stone to ensure you get a crispy crust.
