Plant-based, lower in calories, and ready in 30 minutes. Karla Salinari | Plant-Based Nutritionist 🌱

Ingredients you’ll need:
* 1 package Soy Ground “Beef”
* 1/2 large head cabbage, thinly sliced
* 1/2 red bell pepper, chopped
* 1/2 green bell pepper, chopped
* 1/2 onion, chopped
* 2 garlic cloves, minced
* 1 tbsp tomato paste
* 1/2 to 3/4 cup vegetable broth
* 2 tbsp vegan Worcestershire sauce
* 1 tsp smoked paprika
* 1 tsp onion powder
* 1 tsp garlic powder
* 1/2 tsp black pepper
* Salt to taste

How to make it:
1. Add a splash of vegetable broth to a large skillet over medium heat.
2. Sauté the onion, peppers, and garlic for 3–4 minutes.
3. Add the tomato paste and cook for about 1 minute.
4. Add the plant-based ground “beef,” smoked paprika, onion powder, garlic powder, and black pepper. Cook another 3–4 minutes.
5. Add the cabbage, vegan Worcestershire sauce, and 1/2 cup vegetable broth.
6. Toss everything together, cover, and cook for 10–12 minutes, stirring occasionally.
7. Uncover and cook another 3–5 minutes until the cabbage is tender and most of the liquid has cooked off.
8. Taste and adjust salt and seasoning.

One pan, lots of flavor, and done in about 30 minutes. đź’›

Protein matters, yes!

But the obsession with hitting some magical protein number while ignoring everything else? Wild.

I’m looking at the whole plate.

Are you getting enough fiber?
Are you eating fruits and vegetables?
Are you including beans, whole grains, nuts, seeds, and other nutrient-dense foods?
Is the way you’re eating actually supporting your blood sugar, cholesterol, digestion, energy, and overall health?

Because you can hit your protein goal every day and still have a diet that’s missing a lot.

Protein is one piece of the puzzle.
It is not the entire puzzle.

So yes, keep an eye on protein.

But please stop acting like every meal is a math problem you have to “win.”

What are we tracking next… fiber? 👀

Trying to lose weight doesn’t always mean eating less food. Sometimes it means changing what takes up space on your plate. 👀

Plant-forward meals can give you more volume + more fiber for fewer calories depending on how they’re prepared.

For example:

🥪 Chickpea mash sandwich vs. tuna + mayo 👇🏼
A veggie-packed chickpea sandwich can be around 350–400 calories, while a mayo-heavy tuna sandwich can easily land around 450–550+.

🌮 Lentil tacos vs. beef tacos 👇🏼
Lentils give you protein plus fiber, and when you pile on lettuce, tomatoes, salsa, cabbage, and other veggies, you can build a much bigger plate without dramatically increasing calories.

🍳 Tofu scramble vs. eggs + butter 👇🏼
Tofu + a skillet full of vegetables can give you a satisfying, high-volume breakfast while keeping calories and saturated fat more moderate.

That’s the part I want you to understand: You don’t have to live on tiny portions to lose weight.

Sometimes we simply shift the plate toward more vegetables, beans, lentils, whole grains, fruit, and lean plant proteins so you can eat a satisfying amount of food while supporting your weight, blood sugar, and cholesterol goals.

And you can still keep the foods and flavors that feel like home.
