Ingredients
1 lb lean ground beef
1 small head of green cabbage, chopped into bite-sized pieces
1 can (14 oz) diced tomatoes
1/2 cup beef broth
1/2 medium onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp dried oregano
Salt and black pepper to taste
1/2 cup sour cream or plain Greek yogurt (for topping)
Roasted diced potatoes for serving
Instructions
Brown Beef: Heat olive oil in a skillet over medium heat, sauté the onions and garlic until fragrant, then brown the ground beef thoroughly.
Season: Add the diced tomatoes, beef broth, oregano, salt, and pepper to the skillet, stirring well to combine the flavors.
Layer: Place the chopped cabbage into the slow cooker, pour the seasoned beef and tomato mixture over it, and toss gently.
Slow Cook: Cover and cook on HIGH for 2 to 3 hours (or LOW for 5 to 6 hours) until the cabbage is perfectly tender and translucent.
