- 1 tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- 1–2 sprigs fresh rosemary or thyme
🦐 Garlic Butter Shrimp
- 8–10 large shrimp, peeled and deveined
- 1 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- ½ tsp paprika
- ¼ tsp Cajun seasoning
- Salt and black pepper, to taste
- 1 tbsp fresh parsley, chopped
🌿 Roasted Asparagus
- 1 bunch fresh asparagus, trimmed
- 1 tbsp olive oil
- 1 tbsp butter
- 1 clove garlic, minced
- Salt and black pepper, to taste
🥔 Buttery Mashed Potatoes
- 1½ lbs Yukon Gold or russet potatoes, peeled and cubed
- 3 tbsp butter
- ½ cup warm milk or heavy cream
- 2 cloves roasted or minced garlic, optional
- Salt and black pepper, to taste
- Fresh parsley, for garnish
👩🍳 Directions
1. Make the mashed potatoes:
Boil the potatoes in salted water for 15–20 minutes, or until fork-tender. Drain well, then mash with butter and warm milk or cream until smooth and creamy. Season with salt and pepper. Keep warm.
2. Prepare the asparagus:
Toss asparagus with olive oil, garlic, salt, and pepper. Roast at 425°F (220°C) for 10–15 minutes, or sauté in a skillet until tender-crisp. Finish with a little butter.
3. Season the ribeye:
Pat the steak dry and season generously with salt, black pepper, and garlic powder. Let it sit at room temperature for about 20–30 minutes before cooking.
4. Sear the steak:
Heat a cast-iron skillet over high heat. Add olive oil and place the ribeye in the hot pan. Sear for about 3–4 minutes per side, depending on thickness and desired doneness.
Add butter, smashed garlic, and rosemary or thyme. Tilt the pan slightly and repeatedly spoon the melted garlic butter over the steak.
5. Rest the steak:
Transfer the ribeye to a cutting board and let it rest for 5–10 minutes before slicing. For medium-rare, aim for an internal temperature around 130–135°F (54–57°C) after resting.
6. Cook the shrimp:
In the same skillet, add butter and olive oil. Add garlic and sauté for about 30 seconds. Add shrimp, paprika, Cajun seasoning, salt, and pepper.
Cook for approximately 2 minutes per side, until the shrimp are pink and opaque. Finish with fresh parsley.
7. Build the plate:
Spoon the creamy mashed potatoes onto the plate. Add the asparagus and juicy ribeye, then arrange the garlic butter shrimp alongside. Drizzle any remaining garlic butter from the skillet over the steak and shrimp.
