Perfect Pairings: Ziba Kishmish Raisins x 1655 Gruyère

One of Switzerland’s oldest and most beloved cheeses, Gruyère is known for its savory depth, richness, and subtle fruit notes. For this pairing, cheesemonger Alex Armstrong of selected 1655 Gruyère, a special reserve aged by Fromage Gruyère S.A. with notes of tropical fruit, cashew, and warm bone broth.

Our Kishmish Raisins bring a bold floral sweetness that beautifully balances the richness of the cheese. Their concentrated flavor stand up to the intensity of the Gruyère in a way few raisins can, creating a sweet and savory interplay reminiscent of fondue and white wine.
Together, the Kishmish and 1655 Gruyère create a bite that is layered, comforting, and deeply satisfying.

Meet the Shungul Khani, the heirloom grape behind our Kishmish Raisins.

Grown on family farms in the Kandahar and Zabul provinces of southern Afghanistan, this prized variety has been cultivated for centuries.

Hand-harvested at peak ripeness, the grapes are hung from the ceilings of kishmish khanas (traditional Afghan drying structures with ventilated brick walls that allow steady airflow while protecting the fruit from direct sun.)

This slow process makes all the difference. It preserves the Shungul Khani's naturally vibrant green color and concentrates its flavor into something almost candy-like. Think chewy, almost floral sweetness, so naturally sweet they've earned the nickname "nature's gummy bear."

No additives, no shortcuts. Just a time-honored method and one extraordinary grape.

Spring has returned to Kapisa.
Mustard flowers bloom again across the hillsides, painting them in soft waves of yellow, followed closely by the hum of bees returning to the fields.
Ziba means beautiful, and this is exactly what we mean. 🌼

Our fig jam has been a favorite for a reason.
Made with our sun-dried figs, slow-simmered with fresh orange and warm cardamom until rich, sticky, and deeply sweet, it's the kind of thing that makes a simple snack board feel special or turns morning toast into something worth savoring.
We love it with sharp cheeses and crackers, but it works beautifully however you use it.

For centuries, Afghanistan has been at the heart of global trade, a crossroads where East met West along the Silk Road. As early as the 2nd century BC, the Chinese envoy Zhang Qian established links with people around ancient Balkh, and caravans soon carried silk from China to the Roman world through Afghan cities.

Balkh, Herat, Kabul, Bamiyan, and Badakhshan became major hubs where traders exchanged Chinese silk, Indian spices, Persian silver, Roman glass, and lapis lazuli from Badakhshan. Spices like cumin, cardamom, and turmeric traveled west, while local produce like pomegranates, grapes, apricots, almonds, and pistachios reached markets far beyond their origins.

For over a thousand years, Afghanistan’s network of mountain passes and desert valleys linked continents, carrying not just goods but ideas, art, and stories.

Today, its markets remain a living legacy of that history, where every stall, pile of spices, and basket of fruit reflects centuries of global connection.

Meet Taaj Mohammad, a fig farmer in Kandahar, and one of the people behind our sun dried figs.

Figs have been grown in southern Afghanistan for thousands of years. The region's long summers, arid soil, and low humidity create conditions that push the fruit to develop a depth of flavor that other milder climates just don't produce. That heat and dryness concentrate the natural sugars slowly, over time, until what's left is a fig with a chewy but firm sweet center and warm notes of bourbon and brown sugar.

Taaj has spent his life working this land, season after season. That knowledge and care is reflected in every bag of figs that ends up in your pantry.
