Wedge Salad Bites with SkinnyEats Ranch Dressing

Ingredients
~2 heart of romaine, cores removed
~¼ cup chopped fresh chives
~2 slices cooked bacon, crumbled
~2 oz crumbled blue cheese
~SkinnyEats Ranch Dressing
~1 pint of cherry tomatoes, quartered (optional)
~1 red onion, thinly sliced (optional)


Procedure
~Remove outermost leaves from romaine hearts. Take best-looking romaine leaves and cut into 2ā€ – 2.5ā€ bite size pieces (or just use the smaller, innermost leaves of the heart).

~Shake can of SkinnyEats Ranch Dressing, and dispense a thin line into the middle of each lettuce piece (Skip this step if you are using the tomatoes and red onion).

~If you are using the tomatoes and red onion, place quartered tomatoes and sliced onion into a bowl and toss with SkinnyEats Ranch Dressing until lightly coated. Scoop a small amount of the mixture into each lettuce cup.

~Sprinkle with chives, bacon, and blue cheese crumbles. Serve.

This recipe is new twist on the classic Italian pasta salad. And it's fun to make- especially for kids!

SkinnyEats Creamy Italian Pasta Salad Skewers

~1 package tortellini (I used organic whole wheat cheese tortellini)
~1 red bell pepper
~1 orange bell pepper
~1 pint of grape tomatoes
~Fresh basil leaves
~SkinnyEats Creamy Italian dressing


Procedure
~Cook the tortellini according to the package instructions.

~Cut the bell peppers into 1-inch squares. Wash the basil and tomatoes.

~Once tortellini has cooled, toss with SkinnyEats Creamy Italian Dressing until lightly coated.

~Assemble skewers and serve.

Try this light and summery SkinnyEats recipe!

SkinnyEats Caesar Salad Spears
Yield: about 30 spears

Ingredients
~1 Tbsp extra-virgin olive oil
~4 Belgian endives
~Kosher salt
~Freshly ground pepper
~Squeeze of lemon
~1 cup diced bread, diced into 1/4-inch cubes or smaller (I used Angelic Bakehouse Sprouted Seven Grain Bread)
~2 Tbsp freshly grated Parmigiano-Reggiano cheese, plus a little more for garnish

Procedure
~Preheat oven to 350°.

~Toss the diced bread with olive oil until lightly coated. Sprinkle with salt and pepper.

~Spread the bread evenly onto a baking sheet and toast for 5 minutes, stir, then continue to toast in 5-minute increments until golden and crisp (this should take no more than 15 minutes).

~Trim the endives and remove the 15 largest leaves from 2 of the heads. Stack the leaves and trim them to about 4 inches.

~Thinly slice the remaining endive, along with the trimmings of the 2 other heads (you should have about 3/4 cup). Put trimmings in a bowl and add squeeze of lemon. Toss with SkinnyEats Caesar dressing to taste, or until lightly coated.

~Spoon the salad mixture into each spear. Garnish with the croutons and grated parmesan. Serve immediately.

SkinnyEats Blue Cheese & Walnut Finger Sandwiches
Yield: Makes about 7 dozen (84 sandwiches)

Ingredients
~SkinnyEats Blue Cheese Dressing, to taste (I used about half of the can)
~3/4 cup walnuts, chopped
~8 oz Weight Watchers whipped cream cheese spread, softened
~1 Tbsp fresh parsley, chopped
~2 bread loaves (22 slices) of your choice (I used Angelic Bakehouse Sprouted Seven-Grain)
~Fig or cherry preserves (try to get 100% fruit preserves with no cane sugar)

Procedure
~Preheat oven to 350°. Bake walnuts in a shallow pan about 7 minutes or until toasted and fragrant, stirring after 5 minutes. Allow to cool completely. Chop walnuts and set aside.
~Stir together cream cheese and parsley. Add SkinnyEats Blue Cheese dressing to taste, or until the spread reaches your desired consistency.
~Mix in chopped walnuts. Spread on 1 side of each bread slice.
~Spread preserves on half of bread slices. Top with the other bread slices, with the cheese side down.
~Cut crusts from sandwiches, and cut each sandwich into 8 pieces. If you don’t plan to serve them immediately, you can chill the uncut sandwiches in plastic bags up to 24 hours.

*Quick snack variation: eat the blue cheese/cream cheese spread and preserves on crackers

Here's a fun spring recipe idea, great for a party!

Cheesy Broccoli Quinoa Bites
with SkinnyEats Thousand Island Dressing
Yield: 48 mini muffins (about 8 servings)

Ingredients
~SkinnyEats Thousand Island Dressing
~2 cups cooked quinoa
~8 egg whites
~1 (15 oz) can great northern beans, drained and rinsed
~2 cups frozen broccoli, defrosted and finely chopped
~1 zucchini, shredded (about 1 cup)
~2 cups shredded reduced fat mild cheddar cheese (or daiya cheddar cheese for a dairy-free recipe)
~2 teaspoons garlic powder
~1 teaspoon dried thyme
~1 teaspoon onion powder
~cooking spray

Procedure
~Preheat oven to 350°F.
~Spray mini muffin pan with cooking spray.
~Combine all ingredients except the SkinnyEats Thousand Island Dressing in a large bowl.
~Use a 1 tablespoon scoop, add 1 heaping scoop of the mixture into each cup of the pan.
~Bake about 23 minutes, or until edges are golden brown and muffins appear firm.
~Cool for a few minutes and remove from pan
~Arrange on a serving platter, and top each mini muffin with a dollop of SkinnyEats Thousand Island.
~Serve to guests, or eat them all yourself!
