🎃 Grandma's Pumpkin Pancakes 🥞
🥄 Ingredients:
Dry Ingredients:
1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
Wet Ingredients:
1 cup pumpkin puree
1 cup buttermilk
2 large eggs
2 tablespoons melted butter
1 teaspoon vanilla extract
For Cooking:
Butter or oil for the griddle
Optional Toppings:
Maple syrup
Whipped cream
Chopped pecans
Additional cinnamon
Directions:
Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.
Mix Wet Ingredients: In a separate bowl, whisk together the pumpkin puree, buttermilk, eggs, melted butter, and vanilla extract until smooth.
Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
Preheat the Griddle: Heat a griddle or large skillet over medium heat. Lightly grease with butter or oil.
Cook the Pancakes: Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface and the edges begin to set, about 2-3 minutes. Flip and cook for an additional 2-3 minutes, or until golden brown and cooked through.
