🎃 Grandma's Pumpkin Pancakes 🥞

Dry Ingredients:

1 1/2 cups all-purpose flour
2 tablespoons granulated sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt
Wet Ingredients:

1 cup pumpkin puree
1 cup buttermilk
2 large eggs
2 tablespoons melted butter
1 teaspoon vanilla extract
For Cooking:

Butter or oil for the griddle
Optional Toppings:

Maple syrup
Whipped cream
Chopped pecans
Additional cinnamon
Directions:
Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

Mix Wet Ingredients: In a separate bowl, whisk together the pumpkin puree, buttermilk, eggs, melted butter, and vanilla extract until smooth.

Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.

For the Salad:

2 cups fresh cranberries, chopped
1/2 cup granulated sugar
2 large apples, diced (Granny Smith or Honeycrisp work well)
1 cup seedless red grapes, halved
1 cup celery, thinly sliced
1/2 cup chopped walnuts or pecans
1/2 cup raisins or dried cranberries
For the Dressing:

1/2 cup mayonnaise
1/2 cup sour cream
1 tablespoon lemon juice
1 tablespoon honey
Salt and pepper to taste
Directions:
Prepare the Cranberries: In a small bowl, combine the chopped cranberries and granulated sugar. Stir well and let sit for about 15 minutes to allow the cranberries to release their juices and the sugar to dissolve.

Mix the Salad Ingredients: In a large mixing bowl, combine the diced apples, halved grapes, sliced celery, chopped walnuts or pecans, and raisins or dried cranberries. Add the sweetened cranberries to the bowl and toss everything together.
