Step 1: zest, squeeze and pour into ice cube molds for future use

Leftover rinds…
Option 1 (Lime Simple Syrup): blend 8-10 lime rinds with 3 c water. Plus only 2-3 times. Strain the lime water into a pot and add equal parts sugar and bring to a boil. Pour into small jars to use for cocktails or ice tea or other cool summer drink ideas

Option 2 (Disinfectant Spray): place 1 c of rinds to 2c water and bring to a boil. Let cool, strain out rinds and pour lime water into spray bottle with 1 T white vinegar or 1 t 70% rubbing alcohol and use as a disinfectant cleaner

Spring Salad (arugula, pea shoots, shaved raw asparagus and roasted asparagus, cucumber and peas)
Appetizer board of nibbles
Roasted chicken with veggies

When the girls can all find a mutual date for lunch then it’s time to set the table.
I was hoping for an outdoor Spring setting but inclement weather forced me indoors. Next best thing - bring the Spring inside. All thrifted items except for the stunning candlesticks and candles gifted by Donna. Here’s to our girl’s lunch

Here’s a customer and niece/godchild favorite.
Goat cheese stuffed zucchini rolls over couscous with roasted grape tomatoes. I will admit this dish takes a few more steps than my usual easy peasy recipe but it’s worth it.

- Roast grape tomatoes with whole peel on garlic cloves in a bed of olive oil (salt, pepper, thyme) at 400 degrees until caramelized. Set aside
- Let goat cheese come to room temperature, then mix in some of the tomato oil. Set aside.
-Cook couscous, set aside
- Slice Zucchini lengthwise and grill until tender, set aside on paper towels to soak up some oil.
- Sauté fine dice onion and either the left over bits of zucchini or use kale, spinach whatever you have on head.
- Mash the roasted garlic and combine with some of the tomato oil then mix it into the couscous.
- spread or Pipe the goat cheese onto the zucchini strips then add some of the onion/veg mixture and roll up.
- Place the zucchini rolls on top of the couscous then add some grape tomatoes and drizzle more of the oil over top. And don’t forget to season each along the way and taste.
It’s delicious. Each component on its own and certainly all together… YUM

Are you entertaining this weekend?
Add a different kind of floral to your table.
I made my spiced butternut squash and whipped it with some goat cheese. Piled some in the middle of the plate and started placing endive leaves round and round. Added more butternut mixture to the middle and kept crating a floral design. I sprinkled a few small cubes of the roasted butternut squash and roasted pecans to finish it off. Yum

These little eggplant bites turned out quite tasty, and holiday color appropriate.

-Grill or roast eggplant slices, let cool
- make a gremolata of minced parsley,mint, crushed garlic, chopped pecans, lemon zest & small of amount lemon juice and touch of olive olive (you can also add grated Parmesan but I forgot)
- mix creamy goat cheese with a little bit of feta, chopped shallots, salt, pepper. The place a spoonful in the middle of each slice and fold up like a taco.
- roll the edge of the goat cheese into the gremolata or just spoon on each. Top with pomegranate seeds and enjoy!!
