Spring has sprung in our market! Ramp risotto with morel mushrooms and sea scallops called for - a village level old vine bottling from 2019, Paul Nicole, hit the spot. As I taught my kids, the marine fossils that line the soil in Chablis give the wine a chalky quality and make the wine distinct. Geography, geology, botany - science is cool!

I loved the wine & cheese tasting I did last night for The best part of my job is meeting awesome people 🥂🥂🥂

We tasted four wines alongside a variety of cheeses - chèvre, piave, aged cheddar and a simple blue. As always, people varied in their favorites. A standout for me was the goat cheese, dried apricot and Menetou Salon (think baby Sancerre) and the Malbec by the brilliant with dark chocolate pretzels, yummmmmmmm

Happy🤎day!! I hosted another tasting last night with the fabulous exotic truffles. I love the savory flavors in the box such as ginger, wasabi, Hungarian paprika, and toasted curry powder that lend to rich discussions about wine & food pairings.

Last night I paired this with the family estate Ripasso. is a beautiful example of indigenous grapes made in a way to complement the spice laden cuisine that comes through the port of . The wine goes through a second fermentation on the skins of the dried grapes, a wine that sells for multiples more.

So with the ripasso, you get the complexity, dried fruit, cocoa, cinnamon, dried roses and more for a wine that is still affordable. And it’s a beauty with chocolate truffles.

It is a Seattle kind of night. I’m remembering an awesome dinner circa 2009 with where the farm’s produce nourished our souls.

So, tonight I made halibut in carrot-cilantro broth over spinach, barley and lentils. In honor of our old home, I also opened a bottle recently discovered from my Seattle stash - a beautiful .hexamer Riesling from 2007, “Quarzit” named for the soils so rich in minerality. The wine had the right amount of ripe fruit, acidity and fruit concentration to match the ginger, carrot, cilantro punchy flavors in this dish. Thank you for this 👍🏽👍🏽 import

Have I mentioned the raffle prize?? If you can’t attend the upcoming Hope for Ayoni wine tasting, make sure you buy a raffle ticket…or three. These kinds of bottles don’t come along often.

Champagne Salon was the first of our age to be made with fruit all from one village, at a time when this singular focus made it an oddity and soon an obsession. This is the only wine that the Champagne house makes, and they only make it in exceptional vintages.

1996 was an exceptional vintage. Wine magazine Decanter awarded the ’96 Salon a perfect 100-point score, calling it, “A warm, even hot, spring with no real change during the summer, conditions that allowed the grapes to gorge themselves on sugar while preserving good acidity…Hazelnut, spices, flowers form part of the remarkable aromatic complexity of this Champagne that also has also remarkable depth of character. Perhaps the most impressive Salon of the tasting. On the palate, a sensation of flesh and opulence, but also the telltale precision and erect backbone of racy acidity, and an enthralling finish ending on a refreshing note of salinity. A truly great Salon that leaves one speechless. (YC)”

If you’ve never tasted aged Champagne, you are in for a treat. In fact, Salon is known for its longevity and needs time to taste its best. I opened a bottle recently and was blown away – its salinity, richness and long-lasting finish are unparalleled and if you are an investor, this will continue to appreciate and taste better with further age.

Expert says, “Due to its rarity and cost, Salon remains prohibitive for many, yet the opportunity to taste a Salon in maturity is one of the great experiences of Champagne.”

This bottle is valued at $1600. It has been in professional storage until a month ago when I brought it home to cellar conditions.

Why I started DiniVino

I'm Dini Rao, I've been hosting people for over 20 years. Truly, I hosted my first dinner and cooking party while I was in high school! I don’t think I served wine then... I’ve found that hosting parties, dinners, and gatherings in my home has been the richest way to build meaningful relationships with people.

In talking to people, I realized that most people want to host more often but life gets busy, hosting seems like a monumental effort and there are fears that come up, especially when serving wine. I decided to use my hostess-ing, wine and people skills to help.

My videos and page are meant to help people who love to host, want to build more meaningful friendships and want to add more joy to their lives. Is that you?
