Tired of mushy scrambled eggs? Make the viral sensation I’m calling Egg Bite Onion Rings!
They taste WAY better than drive through fast food breakfast and take less than 5 minutes to make.

I bet you have an onion in that fridge that needs to be used up, and I know you have eggs and cheese. I also used some leftover ham, cut into little cute pieces.
I used Salt Dust to season my onion rings and egg mixture, you can use whatever you want, but I invented Salt Dust to have the perfect umami flavor that is chef’s kiss next level delicious.

Egg Bite Onion Rings
(Yields 8-12 egg bite onion rings)
✔️1 sweet onion, cut into 1/2” sliced, then rings separated
✔️Salt Dust (or use salt and pepper)
✔️6 eggs
✔️1 tablespoon heavy cream
✔️1 tablespoon olive oil
✔️1/2 cup grated Colby Jack cheese
✔️1/4 cup freshly grated parm
✔️1/4 cup chopped ham
✔️1 tablespoon chives
Season the onion slices with Salt Dust (or salt and pepper).
In a medium mixing bowl with a pour spout (or use a 4 cup pyrex measuring bowl) whisk together the eggs, cream, and 1/2 teaspoon of Salt Dust (or use salt and pepper).
Heat the olive oil in a large flat bottomed sauté pan to medium heat. Working in batches, place the onion rings in the pan, filling up the space in the pan. Let the onions cook about 2-3 minutes, then pour the whisked egg mixture into the center of each onion ring. Do not overfill as you will be adding more filling. Add your desired amount of ham, making sure not to overflow the onion rings.
Cover and let cook 2-3 minutes, until the egg is solidified enough to flip over, then sprinkle the grated cheese on each filled onion ring. Carefully flip each onion ring, and sprinkle cheese on the other side. Let cook 1-2 more minutes, then carefully remove each egg bite onion ring to a plate, garnish with chopped chives and serve.
