Charlito’s Cocina, a NYC based producer of high-quality charcuterie, began in 2011, inspired by a desire to celebrate the food preservation tradition of curing, as well as the goal of making high quality cured foods more accessible. Specializing in the production dry cured salami, our products are simple and made with the best ingredients we can find, with technique that has survived and evolved through generations.

The hand painted sign part is definitely true. And its being with us since the early days at Union Square Holiday Market is also true. It’s durable and beautiful and every time I look at it I’m reminded that these are the good old times. The long hours hawking Trufa Seca on 14th street, the hauling of an oversized piece of metal masterfully transformed into a prominent homage to the Charlito’s identity by the sign masters (it’s been awhile but still have a ton of love for y’all), while wheeling a slicer in a suitcase (yes, there is a slicer in that suitcase). I’m savoring all the moments. This cured meats ride has been quite a journey.
And just in case you’re wondering, this video is courtesy of legendary pickler and food world OG Rick Field . In what other industry does a former tv commercial director turned pickle company founder shoot a 30 second video about entrepreneurship by way of a cuban jewish salami maker from new york holding a hand painted metal sign that he can barely stand up straight with? I can’t think of one.

Baldor Bites happened yesterday. I tried to post this video during the show, to let y’all know we would be there at booth 1152 in case you wanted to drop by, and the day just flew. A beautiful crowd of excited and curious food minds came hungry, and did not disappoint. It gave me energy to connect with so many familiar faces, and meet so many new, hard working, creative people adding good vibes to the food space. It’s always humbling to get up close and personal with so many of the countless behind the scenes things and people that need to happen and show up every day just so we can have food on our plates. Thank you to for including Charlito’s in the mix. What an inspiring group of producers, purveyors, and customers. 🙏✌️❤️

A little tidbit : One thing I’ve loved about the onboarding process with AG is how they really value human interaction . it’s run by a small group of passionate food lovers, who actually pick up the phone when you call, and answer your email when you were write. That’s a beautiful thing, and seemingly increasingly rare. Excited to be among the offerings here!

in a world of automation, and automation of automation, we are doubling down on human touch. through all the hoops and hurdles of doing business in today’s world, one small thing we can do is show up. people are stressed, and with good reason. yet when we meet stress with stress, we get stress squared. sometimes it takes longer, but being present. hand delivering an order to an awesome customer when they’re in a pinch, picking up the phone rather than emailing. being generous with our time and kindness, understanding that being on the receiving end of an unkind email/text/call is often misdirected frustration - they always leave us feeling better than the alternatives.
