Directions

Directions

Stir in cumin, coriander, chili powder and cook for another minute.

Pour in the chicken broth and add the chicken breasts. Bring to a boil, then reduce heat, cover, and simmer until chicken is cooked through (~12‑15 minutes depending on size).

Remove chicken, shred with two forks, and return to pot.

Add white beans and green chiles; then stir in corn. For a creamy texture, mash or purée about one‐third of the beans and stir back in.
