Grandma’s Old-Fashioned Bread Pudding with Vanilla Sauce 🍮🍞

Ingredients:

For the Bread Pudding:

4 cups cubed day-old bread
2 cups milk
½ cup sugar
3 large eggs
1 teaspoon vanilla extract
½ teaspoon ground cinnamon
¼ teaspoon salt
¼ cup melted butter
½ cup raisins (optional)

For the Vanilla Sauce:

½ cup heavy cream
¼ cup sugar
½ teaspoon vanilla extract
1 tablespoon butter

Directions:

Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.

In a large bowl, combine the cubed bread, milk, sugar, eggs, vanilla extract, cinnamon, and salt. Mix well and let it sit for about 15-20 minutes to allow the bread to soak up the liquid.

Stir in the melted butter and raisins (if using).

Pour the mixture into the prepared baking dish.

Bake for 40-45 minutes, or until the bread pudding is golden brown and set.

While the bread pudding is baking, prepare the vanilla sauce. In a small saucepan, combine the heavy cream, sugar, vanilla extract, and butter.

Cook over medium heat, stirring constantly, until the sugar is dissolved and the sauce is slightly thickened, about 5-7 minutes.

Let the bread pudding cool slightly before serving.

Drizzle the warm vanilla sauce over the bread pudding and serve.

Tip: Use challah or brioche bread for a richer flavor. You can also add other spices like nutmeg or cardamom.

1 lb baby potatoes (red or gold), halved
1 cup baby carrots (or sliced regular carrots)
1 cup fresh green beans, trimmed
2 tbsp olive oil
3 cloves garlic, minced

Chicken Piccata Pasta 🍝🍋

Ingredients:

For the Chicken:

5 lbs boneless, skinless chicken breasts, sliced thinly
Salt and pepper to taste
½ cup all-purpose flour
3 tablespoons olive oil
2 tablespoons butter

For the Piccata Sauce:
2 cloves garlic, minced
½ cup chicken broth
¼ cup lemon juice
2 tablespoons capers, drained
2 tablespoons butter
2 tablespoons chopped fresh parsley

For the Pasta:
1 lb pasta (spaghetti, linguine, or fettuccine)
Salt for cooking pasta

Directions:

Cook the pasta according to package directions until al dente. Reserve about ½ cup of pasta water before draining.

Season the chicken slices with salt and pepper to taste. Dredge them in flour, shaking off any excess.

In a large skillet, heat the olive oil and butter over medium-high heat. Add the chicken in a single layer and cook for about 3-4 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.

Pour in the chicken broth and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.

Add the capers and butter to the sauce. Stir until the butter is melted and the sauce has slightly thickened.

Return the chicken to the skillet and toss to coat it with the sauce.

Add the cooked pasta to the skillet and toss everything together, adding a little of the reserved pasta water if needed to create a creamy sauce.

Sprinkle with fresh parsley and serve immediately.

Tip: Serve with a side of crusty bread for soaking up the delicious sauce. You can add a pinch of red pepper flakes to the sauce for a little heat.
