Honey-Glazed Carrot Cake 🥕🍯
Ingredients:
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp salt
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 1/2 cup applesauce
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 cups grated carrots
Honey Glaze:
- 1/2 cup honey
- 1/4 cup unsalted butter
- 1/4 cup brown sugar
- 1 tsp vanilla extract
- 1/4 tsp ground cinnamon
- Chopped pecans (optional)
Instructions:
1. Preheat Oven: Heat your oven to 350°F (175°C). Grease a 9-inch round cake pan.
2. Mix Dry Ingredients: In one bowl, mix flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
3. Combine Wet Ingredients: In another bowl, whisk together granulated sugar, brown sugar, vegetable oil, applesauce, eggs, and vanilla until smooth.
4. Combine and Add Carrots: Stir the dry mix into the wet mix until blended, then fold in grated carrots.
5. Bake: Pour batter into the pan and bake for 30-35 minutes. A toothpick should come out clean.
6. Cool: Let the cake cool for 10 minutes in the pan, then move it to a wire rack to cool completely.
7. Make Honey Glaze: In a saucepan, heat honey, butter, brown sugar, vanilla, and cinnamon over medium heat until well combined.
8. Finish the Cake: Pour the warm glaze over the cooled cake and sprinkle with chopped pecans if you like.
9. Serve: Slice and enjoy your delicious honey-glazed carrot cake!
