🍋🥣 Lemon Herb Vegan Lentil Stew 🥣🍋
A light yet hearty stew bursting with fresh lemon and herb flavors. This Lemon Herb Vegan Lentil Stew is the perfect comforting meal, full of plant-based goodness and vibrant citrus!
Ingredients:
1 cup green or brown lentils, rinsed
1 tbsp olive oil
1 medium onion, diced
2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
1 zucchini, chopped
1 can (14.5 oz) diced tomatoes
4 cups vegetable broth
1 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp dried thyme
1 tsp dried oregano
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
1️⃣ Sauté the veggies: In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until fragrant and softened.
2️⃣ Add the carrots and celery: Stir in the carrots and celery, cooking for another 5 minutes, until slightly softened.
3️⃣ Add the lentils and broth: Stir in the lentils, diced tomatoes, vegetable broth, thyme, and oregano. Bring the stew to a boil, then reduce the heat and let it simmer, covered, for about 30 minutes or until the lentils are tender.
4️⃣ Add zucchini and lemon: Once the lentils are cooked, add the zucchini, lemon juice, and lemon zest. Simmer for an additional 10-15 minutes until the zucchini is tender.
5️⃣ Season and serve: Taste and adjust the seasoning with salt and pepper. Serve the stew hot, garnished with fresh parsley.
