🍋🌱 Vegan Lemon Bars 🌱🍋
A tangy, sweet, and creamy dessert with a buttery crust and a refreshing lemony filling. These Vegan Lemon Bars are dairy-free and egg-free, yet just as delicious as the classic version!

Ingredients:

For the crust:

1 cup all-purpose flour

½ cup coconut oil, melted

¼ cup powdered sugar

¼ tsp salt

For the lemon filling:

1 cup freshly squeezed lemon juice (about 4 lemons)

¼ cup maple syrup

½ cup full-fat coconut milk (or any plant-based milk)

3 tbsp cornstarch

¼ tsp turmeric (for color, optional)

¼ tsp vanilla extract

Pinch of salt

Directions:
1️⃣ Preheat the oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish with a little coconut oil or line it with parchment paper.
2️⃣ Make the crust: In a medium bowl, mix the flour, melted coconut oil, powdered sugar, and salt until combined. Press the dough evenly into the bottom of the prepared baking dish. Bake for 12-15 minutes, until golden.
3️⃣ Prepare the lemon filling: While the crust is baking, whisk together the lemon juice, maple syrup, coconut milk, cornstarch, turmeric (if using), vanilla extract, and salt in a saucepan. Cook over medium heat, whisking constantly until the mixture thickens (about 5-7 minutes).
4️⃣ Assemble: Pour the lemon filling over the warm crust, smoothing it out with a spatula.
5️⃣ Bake: Return the dish to the oven and bake for another 15-20 minutes, or until the filling is set.
6️⃣ Cool and serve: Let the bars cool to room temperature, then refrigerate for at least 2 hours before cutting into squares. Dust with powdered sugar before serving.

🍋🥣 Lemon Herb Vegan Lentil Stew 🥣🍋
A light yet hearty stew bursting with fresh lemon and herb flavors. This Lemon Herb Vegan Lentil Stew is the perfect comforting meal, full of plant-based goodness and vibrant citrus!

Ingredients:

1 cup green or brown lentils, rinsed

1 tbsp olive oil

1 medium onion, diced

2 cloves garlic, minced

2 carrots, peeled and diced

2 celery stalks, diced

1 zucchini, chopped

1 can (14.5 oz) diced tomatoes

4 cups vegetable broth

1 tbsp fresh lemon juice

1 tsp lemon zest

1 tsp dried thyme

1 tsp dried oregano

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Directions:
1️⃣ Sauté the veggies: In a large pot, heat the olive oil over medium heat. Add the onion and garlic, and sauté for 3-4 minutes until fragrant and softened.
2️⃣ Add the carrots and celery: Stir in the carrots and celery, cooking for another 5 minutes, until slightly softened.
3️⃣ Add the lentils and broth: Stir in the lentils, diced tomatoes, vegetable broth, thyme, and oregano. Bring the stew to a boil, then reduce the heat and let it simmer, covered, for about 30 minutes or until the lentils are tender.
4️⃣ Add zucchini and lemon: Once the lentils are cooked, add the zucchini, lemon juice, and lemon zest. Simmer for an additional 10-15 minutes until the zucchini is tender.
5️⃣ Season and serve: Taste and adjust the seasoning with salt and pepper. Serve the stew hot, garnished with fresh parsley.
