🧀Chicken Parmesan Biscuit Casserole Recipe!
Craving crispy chicken Parmesan and cheesy baked pasta at the same time? This Chicken Parmesan Casserole combines tender rigatoni, rich marinara sauce, homemade crispy breaded chicken, mozzarella, and Parmesan in one bubbling, golden casserole!
Ingredients:

¾ lb rigatoni pasta
32 oz marinara sauce, or up to 48 oz for saucier pasta
3 cups shredded mozzarella cheese, divided
⅓ cup grated Parmesan cheese, divided
2 small boneless, skinless chicken breasts
¾ cup all-purpose flour
2 tsp seasoned salt
¼ tsp black pepper
2 eggs
1½ cups Italian breadcrumbs
¾ cup vegetable oil
2 tbsp butter
Fresh parsley, for garnish

Directions:

Bring a large pot of water to a boil and cook the rigatoni for 1 minute less than al dente, according to the package directions.
Drain the pasta and return it to the pot. Toss with 32 oz marinara sauce, 2 tbsp Parmesan, and 1 cup mozzarella cheese. Set aside.
Pat the chicken breasts dry and cut them into strips about ½ inch thick.

Prepare three bowls for breading. In the first, combine the flour, seasoned salt, and black pepper. Add the whisked eggs to the second bowl and the Italian breadcrumbs to the third.
Coat each chicken strip first in the seasoned flour, then in the eggs, and finally in the breadcrumbs until completely covered. Gently flatten the breaded chicken with your palms.

Add about ¼ inch of vegetable oil to a skillet along with the butter and heat over medium-high.
Working in batches, fry the chicken for about 4 minutes per side, until crispy and golden brown. Transfer to a paper towel-lined plate, then cut into bite-sized pieces.
Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch casserole dish.
Spread half of the rigatoni mixture into the dish. Top with half of the crispy chicken, 2 tbsp Parmesan cheese, and 1 cup mozzarella.

Add the remaining rigatoni, followed by the remaining chicken, Parmesan, and mozzarella cheese.
Bake uncovered for 25 minutes, until hot and bubbly. For a more golden, crispy top, increase the oven temperature to 425°F (220°C) and bake for about 5 additional minutes.
Finish with fresh parsley and serve warm.

Chef's Tip:
Bread the chicken while the pasta water comes to a boil and the rigatoni cooks. It saves prep time and helps get the casserole into the oven faster.

🌽Creamy Bacon Corn Chowder Recipe!
Warm, thick, and packed with comfort, this Corn Chowder combines sweet corn, tender Yukon gold potatoes, vegetables, creamy broth, and crispy bacon for an easy soup that’s perfect for busy weeknights.
Ingredients:

4 slices bacon, chopped
1 tbsp unsalted butter
1 yellow onion, diced
2 celery stalks, diced
1 large carrot, diced
3 garlic cloves, minced
3 cups corn kernels
2 medium Yukon gold potatoes, peeled and diced
3 cups chicken broth
2 cups whole milk
2 tsp salt
1½ tsp fresh thyme, chopped
½ tsp ground black pepper
Chopped chives, for garnish

Directions:

Add the chopped bacon to a large pot or Dutch oven over medium-high heat. Cook for about 6 minutes, stirring occasionally, until crispy.
Remove the bacon with a slotted spoon and place it aside, leaving the bacon drippings in the pot.
Add the butter and allow it to melt. Stir in the onion, celery, and carrot and cook for about 7 minutes, until tender.

Add the minced garlic and cook for another 1 minute.
Stir in the corn kernels, diced potatoes, chicken broth, whole milk, salt, thyme, and black pepper. If using fresh corn, add the reserved corn cobs.
Bring to a gentle simmer, then reduce the heat to medium-low. Cook for about 15 minutes, stirring occasionally, until the potatoes are tender.

Remove the pot from the heat and discard the corn cobs, if used.
Transfer 2 cups of the soup mixture to a blender and blend until completely smooth. Pour the blended mixture back into the pot and stir until the chowder is thick and creamy.
Stir in the cooked crispy bacon. Serve hot with chopped chives and black pepper on top.
