🍑 Delicious Fresh Peach Fritters
Ingredients:
- 2 cups fresh peaches, peeled and diced
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- 1/4 cup granulated sugar
- 1/2 cup buttermilk
- 1 large egg
- 1 teaspoon vanilla extract
- Oil for frying (vegetable or canola)
- Powdered sugar for dusting
Directions:
1. Start by preparing your peaches. Peel and dice them into small pieces, then set aside.
2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and sugar until well combined.
3. In another bowl, mix the buttermilk, egg, and vanilla extract until smooth.
4. Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay!
5. Gently fold in the diced peaches, making sure they’re evenly distributed throughout the batter.
6. In a deep skillet or frying pan, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). To test if it’s hot enough, drop a small spoonful of batter into the oil; it should sizzle and float to the top.
7. Using a spoon or a small ice cream scoop, carefully drop spoonfuls of batter into the hot oil, being sure not to overcrowd the pan.
8. Fry the fritters for about 2-3 minutes on each side, or until they turn a golden brown color. Once done, use a slotted spoon to remove them and place them on paper towels to drain any excess oil.
9. While still warm, dust the fritters with powdered sugar for a sweet finishing touch.
