🧀🔥 Crispy Buffalo Chicken Mac & Cheese Bombs 🔥🧀

Ingredients:

For the mac & cheese:

1 cup (90 g) elbow macaroni

1 tablespoon butter

1 tablespoon all-purpose flour

1 cup (240 ml) milk

1 1/4 cups (125 g) shredded cheddar cheese

Salt and pepper, to taste

For the buffalo chicken mix:

1 cup (150 g) cooked chicken, shredded

3 tablespoons buffalo wing sauce (adjust to taste)

1/4 teaspoon garlic powder

1/4 teaspoon paprika

For assembling:

1/2 cup (60 g) all-purpose flour

2 eggs, beaten

1 cup (100 g) breadcrumbs (panko preferred for extra crunch)

Oil for frying (or cooking spray for baking)

Optional: ranch or blue cheese dip for serving

Directions:

Cook the macaroni:
Boil pasta in salted water until just al dente. Drain and set aside.

Make the cheese sauce:
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened. Remove from heat and stir in cheddar cheese until melted and smooth. Season with salt and pepper.

Mix in the chicken:
Add the cooked macaroni and shredded chicken to the cheese sauce. Stir in buffalo sauce, garlic powder, and paprika. Mix until everything is well coated. Let the mixture cool to room temperature, then refrigerate for 1–2 hours until firm.

Form the bombs:
Once chilled and firm, scoop the mixture into golf ball-sized portions and roll tightly into balls.

Bread the bombs:
Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls. Roll each mac & cheese ball in flour, then dip in egg, then coat in breadcrumbs. Press gently to ensure the coating sticks.

Cook the bombs:
To fry: Heat oil in a deep pan to 350°F (175°C). Fry the bombs in batches for 2–3 minutes or until golden and crispy.
To bake: Preheat oven to 400°F (200°C). Place the breaded bombs on a baking sheet, spray with oil, and bake for 20–25 minutes, flipping halfway through.

Serve:
Let them cool slightly before serving. Serve with ranch or blue cheese dressing and extra buffalo sauce for dipping!

🍤🔥 One-Pot Cajun Shrimp & Chicken Sausage Dirty Rice 🔥🍤

Ingredients:

1 tablespoon olive oil

12 oz (340 g) shrimp, peeled and deveined

8 oz (225 g) chicken sausage, sliced (or turkey sausage)

1 small onion, finely chopped

1 red or green bell pepper, diced

2 celery stalks, diced

3 garlic cloves, minced

1 1/2 cups (285 g) long grain white rice

2 teaspoons Cajun seasoning (adjust to taste)

1/2 teaspoon smoked paprika

1/2 teaspoon dried thyme

1/2 teaspoon black pepper

1/2 teaspoon salt (or to taste)

3 cups (720 ml) low-sodium chicken broth

2 tablespoons chopped parsley (for garnish)

Directions:

Cook the sausage and veggies:
Heat olive oil in a large pot or deep skillet over medium heat. Add the sliced chicken sausage and cook until browned, about 3–4 minutes.
Add chopped onion, bell pepper, celery, and garlic. Sauté for 4–5 minutes, or until softened and aromatic.

🌽🔥 Sweet Heat Honey Jalapeño Corn Ribs 🔥🌽

Ingredients:

4 ears of fresh corn, husked

2 tablespoons olive oil

1 tablespoon honey

1 tablespoon hot sauce (like sriracha or your favorite)

1 jalapeño, finely chopped (seeds removed for less heat)

1/2 teaspoon smoked paprika

1/4 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh lime wedges, for serving

Fresh cilantro or green onions, chopped (optional for garnish)

Directions:

Prepare the corn ribs:
Cut each corn cob lengthwise into quarters to create rib-like strips (stand the cob on its end and carefully slice down with a sharp knife—use caution, it's a tough cut). You’ll get 4 ribs per cob.

Make the sweet heat glaze:
In a small bowl, whisk together the olive oil, honey, hot sauce, chopped jalapeño, smoked paprika, garlic powder, salt, and black pepper. This mixture should be sticky, spicy, and fragrant.

Toss and coat:
Place the corn ribs in a large bowl or on a tray. Drizzle the glaze over the corn and rub it in evenly with your hands or a brush, making sure all the surfaces are coated.

Cook the ribs:
Option 1: Oven-baked
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and arrange the corn ribs in a single layer. Bake for 20–25 minutes, flipping halfway through, until they curl slightly and are nicely roasted.
Option 2: Air fryer
Preheat to 400°F (200°C) and cook in batches for 10–12 minutes, flipping halfway.

Serve:
Squeeze fresh lime juice over the hot corn ribs and sprinkle with chopped cilantro or green onions if desired. Serve warm as a snack, appetizer, or fun side dish!

🥖🧆 Sticky Brown Sugar Meatball Subs with Melty Mozzarella 🧆🥖

Ingredients:

For the meatballs:

1 lb (450 g) ground beef or ground chicken

1/4 cup (30 g) breadcrumbs

1/4 cup (25 g) grated Parmesan cheese

1 egg

2 cloves garlic, minced

1/2 teaspoon onion powder

Salt and pepper to taste

1 tablespoon chopped parsley (optional)

For the sticky brown sugar sauce:

1/3 cup (70 g) brown sugar

1/4 cup (60 ml) soy sauce (use low sodium if preferred)

2 tablespoons ketchup

1 tablespoon Dijon mustard

1/2 teaspoon garlic powder

1 tablespoon cornstarch + 2 tablespoons water (for slurry)

For the subs:

4–6 hoagie or sub rolls

1 1/2 cups (150 g) shredded mozzarella cheese

1 tablespoon butter, melted (for brushing rolls)

Chopped parsley or green onions (optional for garnish)

Directions:

Make the meatballs:
Preheat oven to 400°F (200°C). In a bowl, combine ground meat, breadcrumbs, Parmesan, egg, garlic, onion powder, salt, pepper, and parsley. Mix until just combined—don’t overwork it.
Roll into small meatballs (about 1 to 1.5 inches wide) and place on a baking sheet lined with parchment paper.
Bake for 15–18 minutes, until browned and cooked through.

Prepare the sticky sauce:
While the meatballs are baking, combine brown sugar, soy sauce, ketchup, Dijon mustard, and garlic powder in a saucepan over medium heat. Bring to a simmer, then stir in the cornstarch slurry (cornstarch + water).
Cook, stirring frequently, until the sauce thickens and turns glossy—about 3–4 minutes.

Coat the meatballs:
Add the baked meatballs to the sauce and stir gently to coat them evenly. Let them simmer for 2–3 minutes in the sauce to soak up the flavor.

Assemble the subs:
Slice the hoagie rolls lengthwise without cutting all the way through. Place 4–5 saucy meatballs in each roll. Sprinkle generously with shredded mozzarella.

Toast and melt:
Place the filled subs on a baking sheet. Brush the tops of the rolls with melted butter. Bake at 375°F (190°C) for 5–7 minutes, or until the cheese is melted and bubbly. Broil for 1–2 minutes at the end for extra toastiness (watch closely!).

Serve:
Garnish with chopped parsley or green onions if you like. Serve warm and enjoy the sweet, savory, cheesy goodness!

Ingredients:

For the pasta bake:

1 lb (450 g) cheese tortellini (fresh or refrigerated)

2 tablespoons unsalted butter

4 cloves garlic, minced

2 tablespoons all-purpose flour

2 cups (480 ml) whole milk (or half-and-half for richer sauce)

1/2 cup (120 ml) heavy cream

1 cup (100 g) grated Parmesan cheese

1 cup (115 g) shredded mozzarella cheese

1/2 teaspoon Italian seasoning

1/4 teaspoon ground black pepper

Salt to taste

1/4 teaspoon crushed red pepper flakes (optional, for a kick)

For topping:

1/2 cup (60 g) shredded mozzarella

2 tablespoons grated Parmesan

1 tablespoon chopped parsley (optional, for garnish)

Directions:

Preheat the oven:
Set your oven to 375°F (190°C). Lightly grease a 9x13-inch (23x33 cm) baking dish.

Cook the tortellini:
Bring a large pot of salted water to a boil. Cook the tortellini for 1–2 minutes less than the package instructions (they’ll finish cooking in the oven). Drain and set aside.

Make the garlic Parmesan sauce:
In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant but not browned.
Stir in the flour and cook for another minute, whisking constantly to form a smooth roux.

Stir in the Parmesan and mozzarella, and season with Italian seasoning, pepper, salt, and red pepper flakes (if using). Stir until melted and creamy.

Combine and assemble:
Add the cooked tortellini to the sauce and stir gently to coat. Pour the mixture into the prepared baking dish and spread evenly. Top with the remaining mozzarella and Parmesan.

Bake:
Bake uncovered for 15–20 minutes, or until bubbly and lightly golden on top. If desired, broil for the last 2 minutes to get a golden cheese crust—just keep an eye on it!

Garnish and serve:
Remove from the oven and let rest for 5 minutes. Sprinkle with chopped parsley and serve warm!

🌶️🍗 Crispy Jalapeño Popper Chicken Patties 🍗🌶️

Ingredients:

For the patties:

1 lb (450 g) ground chicken

2 fresh jalapeños, finely chopped (remove seeds for less heat)

1/2 cup (120 g) cream cheese, softened

1/2 cup (60 g) shredded cheddar cheese

1/4 cup (30 g) grated mozzarella (optional for extra stretch)

1/3 cup (40 g) breadcrumbs

1 egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

For the crispy coating:

1 cup (100 g) breadcrumbs or panko

1/2 teaspoon smoked paprika

1/4 teaspoon salt

1 egg, beaten

Oil for pan-frying (vegetable or sunflower oil)

Directions:

Prepare the mixture:
In a large bowl, combine ground chicken, chopped jalapeños, cream cheese, cheddar, mozzarella (if using), 1/3 cup breadcrumbs, 1 egg, garlic powder, onion powder, salt, and pepper. Mix thoroughly with clean hands or a spoon until fully combined.

Shape the patties:
With lightly oiled hands, form the mixture into 6–8 even-sized patties, about 1/2 inch thick. Place them on a plate and refrigerate for 20–30 minutes to firm up—this helps them hold their shape during cooking.

Bread the patties:
In one shallow bowl, beat an egg. In another, mix breadcrumbs with paprika and salt. Dip each chilled patty into the egg, then coat with the seasoned breadcrumbs. Press lightly to help the coating stick.

Cook the patties:
Heat a thin layer of oil in a nonstick skillet over medium heat. Fry the patties in batches for about 4–5 minutes per side, or until golden brown and fully cooked (internal temp of 165°F / 74°C). Avoid overcrowding the pan.

Drain and serve:
Let the patties drain on a paper towel-lined plate. Serve hot with ranch dip, sour cream, or a spicy mayo on the side.

1/2 green bell pepper, finely chopped

2 cloves garlic, minced

1/2 cup (120 ml) ketchup

2 tablespoons tomato paste

1 tablespoon yellow mustard

1 tablespoon Worcestershire sauce (optional, omit if avoiding)

1 tablespoon brown sugar

Salt and black pepper to taste

For the Casserole:

1 bag (32 oz / 900 g) frozen tater tots

1 1/2 cups (150 g) shredded cheddar cheese

1/2 teaspoon smoked paprika (optional)

Chopped fresh parsley, for garnish (optional)

🍗🥣 Crockpot Chicken & Dumpling Casserole 🥣🍗

Ingredients:

For the Casserole Base:

1.5 lbs (680 g) boneless, skinless chicken breasts or thighs

2 cups (480 ml) low-sodium chicken broth

1 can (10.5 oz/298 g) cream of chicken soup

1 cup (240 ml) milk

1/2 cup (120 ml) heavy cream (optional for extra richness)

1 medium yellow onion, finely chopped

2 cloves garlic, minced

2 cups (270 g) frozen mixed vegetables (peas, carrots, corn)

1 teaspoon dried thyme

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

For the Dumpling Topping:

1 cup (125 g) all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup (120 ml) milk

2 tablespoons butter, melted

Directions:

Layer the crockpot:
Place the raw chicken breasts or thighs in the bottom of your crockpot. Top with chopped onion, garlic, and frozen vegetables.

Mix the base:
In a separate bowl, whisk together the chicken broth, cream of chicken soup, milk, heavy cream (if using), thyme, salt, and pepper. Pour this mixture over the chicken and veggies.

Slow cook:
Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken is fully cooked and tender. About 30 minutes before serving, shred the chicken directly in the crockpot using two forks.

Make the dumpling dough:
In a medium bowl, mix together the flour, baking powder, and salt. Stir in the milk and melted butter until just combined. Don’t overmix—it’s okay if the dough is a bit lumpy.

Add the dumplings:
Drop spoonfuls of the dumpling dough over the top of the hot casserole. Cover and continue cooking on high for 30–35 minutes, or until the dumplings are puffed and cooked through. (Avoid opening the lid during this step to maintain steam!)

Finish and serve:
Once the dumplings are done, give everything a gentle stir. Taste and adjust seasoning if needed. Scoop into bowls and serve warm!

1 cup (100 g) shredded mozzarella cheese

1/4 cup (10 g) chopped fresh parsley (optional for garnish)

1/2 teaspoon crushed red pepper flakes (optional, for extra heat)

Directions:

Cook the pasta:
Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente. Drain and set aside.

Season and cook the shrimp and chicken:
In a medium bowl, toss shrimp and chicken pieces with Cajun seasoning, paprika, and olive oil. Heat a large skillet over medium-high heat. Cook the chicken for about 5–6 minutes until golden and cooked through. Remove and set aside. Add shrimp to the same pan and cook for 2–3 minutes per side, until pink and curled. Set aside with the chicken.

Make the Alfredo sauce:
In the same skillet, reduce heat to medium. Add butter and let it melt, then stir in the minced garlic. Cook for about 1 minute until fragrant. Sprinkle in the flour and stir constantly for 1–2 minutes to form a roux. Slowly whisk in the heavy cream and continue stirring until the sauce begins to thicken, about 3–5 minutes. Stir in Parmesan cheese, and season with salt and pepper to taste.

Combine and assemble:
Preheat your oven to 375°F (190°C). In a large mixing bowl or the skillet (if oven-safe), combine the cooked pasta, chicken, shrimp, and Alfredo sauce. Toss well to coat everything evenly.

Bake:
Transfer the mixture to a greased 9x13 inch (23x33 cm) baking dish. Top evenly with mozzarella cheese. Bake for 15–20 minutes, or until bubbly and golden on top.

Garnish and serve:
Let the bake rest for 5 minutes before serving. Sprinkle with chopped parsley and a pinch of red pepper flakes if desired.
