🧀🔥 Crispy Buffalo Chicken Mac & Cheese Bombs 🔥🧀
Ingredients:
For the mac & cheese:
1 cup (90 g) elbow macaroni
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup (240 ml) milk
1 1/4 cups (125 g) shredded cheddar cheese
Salt and pepper, to taste
For the buffalo chicken mix:
1 cup (150 g) cooked chicken, shredded
3 tablespoons buffalo wing sauce (adjust to taste)
1/4 teaspoon garlic powder
1/4 teaspoon paprika
For assembling:
1/2 cup (60 g) all-purpose flour
2 eggs, beaten
1 cup (100 g) breadcrumbs (panko preferred for extra crunch)
Oil for frying (or cooking spray for baking)
Optional: ranch or blue cheese dip for serving
Directions:
Cook the macaroni:
Boil pasta in salted water until just al dente. Drain and set aside.
Make the cheese sauce:
In a saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk and cook until thickened. Remove from heat and stir in cheddar cheese until melted and smooth. Season with salt and pepper.
Mix in the chicken:
Add the cooked macaroni and shredded chicken to the cheese sauce. Stir in buffalo sauce, garlic powder, and paprika. Mix until everything is well coated. Let the mixture cool to room temperature, then refrigerate for 1–2 hours until firm.
Form the bombs:
Once chilled and firm, scoop the mixture into golf ball-sized portions and roll tightly into balls.
Bread the bombs:
Set up a breading station with flour, beaten eggs, and breadcrumbs in separate bowls. Roll each mac & cheese ball in flour, then dip in egg, then coat in breadcrumbs. Press gently to ensure the coating sticks.
Cook the bombs:
To fry: Heat oil in a deep pan to 350°F (175°C). Fry the bombs in batches for 2–3 minutes or until golden and crispy.
To bake: Preheat oven to 400°F (200°C). Place the breaded bombs on a baking sheet, spray with oil, and bake for 20–25 minutes, flipping halfway through.
Serve:
Let them cool slightly before serving. Serve with ranch or blue cheese dressing and extra buffalo sauce for dipping!
