Healthy Enchilada Skillet 🌮🍅🥑
This Healthy Enchilada Skillet is a one-pan meal packed with bold enchilada flavors, lean protein, and plenty of veggies—all without the extra calories from traditional enchiladas. It’s an easy, nutritious, and satisfying dish!

🛒 Ingredients
1 lb ground turkey or lean ground beef
1 small onion, diced
2 cloves garlic, minced
1 red bell pepper, diced
1 zucchini, diced
1 can (15 oz) black beans, drained and rinsed
1 can (14.5 oz) diced tomatoes (with juice)
1 can (10 oz) red enchilada sauce
1 tsp chili powder
½ tsp cumin
½ tsp smoked paprika
Salt and black pepper, to taste
1 cup frozen corn (optional)
4 small corn tortillas, sliced into strips
1 cup shredded cheese (cheddar, Monterey Jack, or dairy-free alternative)
For Garnish:
1 avocado, diced
2 tbsp fresh cilantro, chopped
½ cup plain Greek yogurt (or sour cream)
Lime wedges
📖 Directions
1. Cook the Protein:
Heat a large skillet over medium heat.
Add ground turkey and cook until browned, about 5 minutes.
Add onion and garlic, cooking for 2 more minutes until fragrant.
2. Add the Vegetables & Spices:
Stir in bell pepper, zucchini, black beans, diced tomatoes, corn (if using), enchilada sauce, chili powder, cumin, paprika, salt, and pepper.
Simmer for 5–7 minutes, stirring occasionally.
3. Add Tortillas & Cheese:
Stir in sliced corn tortillas and mix well.
Sprinkle cheese on top, cover, and let cook for 5 minutes until melted.
4. Serve:
Garnish with avocado, cilantro, Greek yogurt, and lime wedges.
