Freakin’ Fantastic Fried Rice
This Freakin’ Fantastic Fried Rice is bursting with shrimp, veggies, and fluffy scrambled eggs in every forkful.
Ingredients:
2 cups cooked jasmine rice (cold or day-old)
1/2 cup small shrimp, peeled and deveined
1/2 cup green peas
1/2 cup shredded carrots
1/4 cup chopped mushrooms
2 green onions, chopped
2 eggs, lightly beaten
2 tbsp soy sauce
2 tbsp vegetable oil
Salt and black pepper to taste
Instructions:
Step 1: Heat 1 tbsp oil in a wok or large skillet over medium-high heat. Scramble the beaten eggs until just set. Remove and set aside.
Step 2: Add the remaining oil and sauté the shrimp until pink and cooked through, about 2–3 minutes.
Step 3: Add green peas, shredded carrots, mushrooms, and green onions. Stir-fry for 2–3 minutes until vegetables are tender-crisp.
Step 4: Add the cold rice to the pan, breaking up clumps and stirring everything together.
Step 5: Pour in soy sauce, season with salt and pepper, and stir well to coat the rice evenly.
Step 6: Return scrambled eggs to the pan, mix gently, and cook for another minute. Serve hot.
