Herb-Crusted Garlic Prime Rib Roast
Ingredients:
- 4 lb beef rib roast (prime rib)
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon black pepper
- 1 tablespoon kosher salt
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 tablespoon Dijon mustard
Directions:
1. Remove the beef rib roast from the refrigerator 1 hour before cooking to allow it to come to room temperature.
2. Preheat the oven to 450°F (230°C).
3. In a small bowl, combine olive oil, garlic, rosemary, thyme, black pepper, salt, onion powder, smoked paprika, and Dijon mustard to create a flavorful paste.
4. Pat the roast dry with paper towels and rub the herb mixture evenly over the entire surface of the meat.
5. Place the roast on a rack in a roasting pan with the fat side facing up.
6. Roast at 450°F (230°C) for 20 minutes to develop a rich crust.
7. Reduce the oven temperature to 325°F (165°C) and continue roasting for 60–80 minutes, or until the internal temperature reaches 130°F (54°C) for medium-rare.
8. Remove the roast from the oven and loosely tent it with foil.
9. Let the meat rest for 20 minutes to allow the juices to redistribute throughout the roast.
10. Slice into thick portions and serve with roasted vegetables, mashed potatoes, or a fresh green salad.
11. Spoon any pan juices over the sliced beef before serving for extra flavor.
