Moroccan Carrot and Lentil Salad๐Ÿ˜‹

For the Salad:
- 1 cup cooked green or brown lentils
- 2 large carrots, grated
- ยผ cup raisins or chopped dates
- ยผ cup toasted almonds or walnuts, chopped
- ยผ cup fresh parsley, chopped
- ยผ cup fresh cilantro, chopped
- ยฝ small red onion, finely diced

For the Dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tsp honey or maple syrup
- 1 tsp ground cumin
- ยฝ tsp ground coriander
- ยฝ tsp smoked paprika
- ยผ tsp cinnamon
- Salt and black pepper to taste

Steps:
1. In a large bowl, combine the cooked lentils, grated carrots, raisins, toasted nuts, parsley, cilantro, and red onion.
2. In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, cumin, coriander, paprika, cinnamon, salt, and black pepper.
3. Pour the dressing over the salad and toss well to combine.
4. Let the salad sit for 10-15 minutes to allow the flavors to meld.
5. Serve at room temperature or chilled. Enjoy!

Ingredients:

For the Chicken:

1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
2 tablespoons olive oil
1/4 cup sweet chili sauce
2 tablespoons soy sauce
1 tablespoon honey
1 teaspoon grated ginger
1 clove garlic, minced
1/2 teaspoon black pepper

For the Coconut Lime Drizzle:

1/4 cup coconut milk (full-fat recommended)
2 tablespoons lime juice
1 tablespoon honey
1/4 teaspoon salt

For the Bowl:

1 cup cooked quinoa or rice
1 cup shredded carrots
1 cup shredded red cabbage
1 cup chopped cucumber
1/2 cup chopped cilantro
1/2 cup chopped peanuts (optional)
Lime wedges, for serving

Instructions:

1. Prepare the Chicken: In a medium bowl, whisk together olive oil, sweet chili sauce, soy sauce, honey, ginger, garlic, and black pepper. Add the chicken cubes and toss to coat evenly. Marinate for at least 15 minutes (longer is better!).

Ingredients:
- 1 small head of cabbage, chopped
- 4-6 slices of bacon, chopped
- 1 medium onion, sliced
- 3-4 cloves of garlic, minced
- Salt and pepper, to taste


Directions:
Start by cooking the bacon in a large skillet over medium heat until it's nice and crispy. Once done, take out the bacon and set it aside, but leave the tasty drippings in the skillet. Next, throw in the sliced onion and sautรฉ it until it becomes translucent. Add the minced garlic and give it another minute to cook. Now, toss in the chopped cabbage, season it with salt and pepper, and let it cook until it's wilted and tender, giving it an occasional stir. Garlic Parmesan Cheeseburger Bombs

Ingredients:

1 lb ground beef
1 tablespoon olive oil
ยฝ teaspoon garlic powder
ยฝ teaspoon onion powder
1 teaspoon Worcestershire sauce
Salt and pepper to taste
8 oz shredded cheddar cheese
1 can refrigerated biscuit dough (8 biscuits)
2 tablespoons unsalted butter, melted
2 tablespoons grated Parmesan cheese
1 teaspoon garlic powder (for topping)
1 teaspoon chopped fresh parsley (optional, for garnish)
Directions:

Preheat your oven to 375ยฐF (190ยฐC). Lightly grease a baking sheet or line it with parchment paper.

In a large skillet, heat olive oil over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon. Drain any excess fat.

Stir in garlic powder, onion powder, Worcestershire sauce, salt, and pepper. Cook for another 1-2 minutes to combine the flavors. Remove from heat and set aside to cool slightly.

Open the can of biscuit dough and separate the biscuits. Flatten each biscuit into a small circle using your fingers or a rolling pin.

Place a spoonful of the seasoned ground beef mixture in the center of each biscuit, followed by a small amount of shredded cheddar cheese.

Carefully fold the edges of the biscuit over the filling, sealing it tightly to form a ball. Place each stuffed biscuit seam-side down on the prepared baking sheet.

Rich Chicken and Mushroom Pasta in Velvety Cream Sauce



Ingredients:
- 2 chicken breasts, sliced thin
- 2 cups sliced mushrooms
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 8 oz pasta such as fettuccine or penne
- Fresh parsley, chopped for garnish



Directions:
Start by cooking the pasta according to the package instructions. Once done, drain it and set it aside. In a large skillet, heat a bit of olive oil over medium-high heat. Add the thinly sliced chicken breasts, seasoning them with salt and pepper. Let them cook until they are browned and fully cooked through, which should take about 6 to 7 minutes. Take the chicken out of the skillet and set it aside for now.



Using the same skillet, toss in the sliced mushrooms and minced garlic. Let them cook together for about 2 to 3 minutes until the mushrooms are tender and have released their juices. Next, pour in the chicken broth and heavy cream, stirring everything together. Allow this mixture to come to a simmer and let it cook for about 5 minutes so the sauce can thicken up nicely.



Then, stir in the grated Parmesan cheese, and return your cooked chicken slices to the skillet. Give everything a good toss so that all ingredients are well combined. Finally, mix in the cooked pasta until its thoroughly coated in the creamy sauce. Sprinkle some freshly chopped parsley on top for a nice garnish, and serve the dish immediately. Enjoy!

Ingredients
1 red apple, cut into matchstick pieces
1 green apple, cut into matchstick pieces
2 tablespoons lemon juice
2 cups matchstick carrots
cup yellow onion, finely diced
cup dried cranberries, sweetened
cup vanilla yogurt
cup mayonnaise
1 tablespoon sugar
teaspoon salt
teaspoon black pepper
1 cup canned mandarin segments, drained
Instructions
Prepare the Apples: Slice both the red and green apples into matchstick pieces. Place them in a bowl, pour the lemon juice over the apple pieces, and toss well to coat. Let the apples sit for about 5 minutes to absorb the lemon juice, which prevents browning.
Combine Ingredients: In a large mixing bowl, add the matchstick carrots, diced onion, and dried cranberries.
Add the Apples: After the apples have soaked in lemon juice, add them to the mixing bowl with the other ingredients.
Make the Dressing: Add the vanilla yogurt, mayonnaise, sugar, salt, and black pepper to the bowl. Stir everything together until well combined and evenly coated.
