Moroccan Carrot and Lentil Salad๐
For the Salad:
- 1 cup cooked green or brown lentils
- 2 large carrots, grated
- ยผ cup raisins or chopped dates
- ยผ cup toasted almonds or walnuts, chopped
- ยผ cup fresh parsley, chopped
- ยผ cup fresh cilantro, chopped
- ยฝ small red onion, finely diced
For the Dressing:
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp apple cider vinegar
- 1 tsp honey or maple syrup
- 1 tsp ground cumin
- ยฝ tsp ground coriander
- ยฝ tsp smoked paprika
- ยผ tsp cinnamon
- Salt and black pepper to taste
Steps:
1. In a large bowl, combine the cooked lentils, grated carrots, raisins, toasted nuts, parsley, cilantro, and red onion.
2. In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, honey, cumin, coriander, paprika, cinnamon, salt, and black pepper.
3. Pour the dressing over the salad and toss well to combine.
4. Let the salad sit for 10-15 minutes to allow the flavors to meld.
5. Serve at room temperature or chilled. Enjoy!
