🔥 1. Prepare the oven

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Add the granulated sugar and pulse until the mixture becomes fine and crumbly.

Add the honey, egg white, and salt.

Soffritto Napoletano, also called Zuppa Forte, is exactly that: a slow-cooked, spicy, deeply flavorful stew made with pork offal, tomato paste, chili, and herbs.

It’s not for the faint of heart… but if you love authentic Naples, this is a must-try. 💥

4.4 lb (2 kg) pork offal (heart, lung, trachea/windpipe), cleaned + chopped
10.5 oz (300 g) mixed pork scraps or stew trimmings, roughly chopped
7 oz (200 g) tomato paste
1.7 oz (50 g) plain tomato sauce
3.5 oz (100 g) lard
1/2 cup (120 ml) dry red wine
1 Tbsp extra-virgin olive oil
1 hot chili pepper (or 1–2 tsp crushed red pepper flakes, to taste)
1 bay leaf
1 sprig fresh rosemary
Kosher salt, to taste
Water, as needed

👩‍🍳 Step-by-Step Instructions
1️⃣ Clean, soak, and blanch the offal
Chop offal into small pieces and rinse well under cold water.
Soak in cold water for 2 hours, changing water occasionally.
Drain, then blanch in boiling water briefly to remove impurities.
Drain thoroughly and set aside.
2️⃣ Build the base
In a heavy pot, melt lard + olive oil over medium heat.
Add offal + meat scraps. Cook until liquid evaporates and pieces start to brown.
3️⃣ Deglaze with red wine
Add red wine and let it cook off completely, scraping up browned bits.
4️⃣ Add tomato + seasonings; slow simmer
Stir in tomato paste + tomato sauce until coated.
Add bay leaf, rosemary, and chili (or flakes).
Add water little by little for a thick but spoonable consistency.
Simmer gently for 2–3 hours, stirring occasionally and adding water as needed.
5️⃣ Season and finish
Adjust salt.
Remove bay leaf + rosemary before serving.
