2 tablespoons olive oil
4 ounces pancetta, diced
or smoked bacon, if preferred
1 medium yellow onion, finely chopped
2 garlic cloves, minced
1 can crushed tomatoes, 28 ounces
2 cans cannellini beans, 15 ounces each, drained and rinsed
1 teaspoon smoked paprika
1 teaspoon dried oregano
½ teaspoon black pepper
½ teaspoon salt, or to taste
½ cup vegetable broth or chicken broth
add more if you prefer it soupier
1 tablespoon tomato paste, optional, for richer flavor
Fresh parsley, chopped, for garnish
Extra olive oil, for drizzling

In a large skillet or Dutch oven, heat the olive oil over medium heat.
