* 2 celery stalks, diced
* 2 carrots, diced
* 1 cup frozen peas

* 1 tsp salt
* ½ tsp black pepper
* 1 tsp dried thyme
* ½ tsp dried parsley
* ½ tsp garlic powder

For the crust:

* 2 refrigerated pie crusts
* 1 egg
* 1 tbsp water

# # # 👨‍🍳 HOW TO MAKE IT

1️⃣ Cook the chicken** 🍗
Season the chicken with salt and pepper. Cook in a skillet over medium heat until fully cooked, about **6–8 minutes per side**, depending on thickness. Let cool slightly, then cut into bite-size pieces.

2️⃣ Sauté the vegetables🧅🥕
Melt the butter in a large skillet or saucepan. Add onion, carrots, and celery. Cook for **5–7 minutes**, until the vegetables begin to soften. Add garlic and cook for another 30 seconds.

3️⃣ Make the creamy sauce🥣
Sprinkle the flour over the vegetables and stir well. Cook for about **1 minute**.

Slowly pour in the chicken broth while stirring constantly to prevent lumps. Add milk and heavy cream. Stir until the sauce thickens, about **3–5 minutes**.

4️⃣ Add chicken & vegetable 🫛🌽
Stir in the cooked chicken, peas, corn, thyme, parsley, garlic powder, salt, and black pepper. Simmer for **2–3 minutes**, then remove from heat.

5️⃣ Assemble the pot pie 🥧
Preheat oven to **400°F (200°C)**.

Place one pie crust into a 9-inch pie dish. Pour the creamy chicken filling into the crust.

Cover with the second pie crust. Pinch or crimp the edges to seal. Cut several small slits in the top to allow steam to escape.

6️⃣ Brush with egg wash 🥚
Whisk together the egg and 1 tablespoon of water. Brush the top crust generously with the egg wash for that beautiful golden finish.

7️⃣ Bake🔥
Bake for **35–45 minutes**, or until the crust is deeply golden brown and the filling is bubbling.

If the edges brown too quickly, cover them loosely with aluminum foil.

8️⃣ Rest & serve❤️
Let the pot pie rest for **10–15 minutes** before slicing. This allows the creamy filling to set slightly and makes it easier to serve.
