This dish is my ultimate comfort food.
As always, it’s all about simplicity: just a handful of ingredients, yet an explosion of flavor.
And even now that I’m an adult, fully capable of handling the molten-hot temperature of this dish, I still eat it the way my mom taught me when I was a kid: with a small plate on the side to let each bite cool down first.
Because Italian food has never been only about flavor or technique.
Before anything else, it’s about tradition, about memories, about love.
