Ingredients:
Makes 5 mini loaves or 1 standard loaf pan:
- 3 ripe bananas, mashed
- 1/3 cup melted butter or vegetable oil
- 2/3 cup brown sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 1/2 cups all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon, optional
- 1 cup chocolate chunks or chocolate bars broken into pieces
- Extra chocolate chunks and banana slices for topping

Preparation method:
1. Preheat oven to 175C / 350F. Line 5 mini loaf pans or 1 standard loaf pan with parchment paper.
2. In a large bowl, mash bananas until smooth. Whisk in melted butter, brown sugar, egg, and vanilla until combined.
3. In a separate bowl, mix flour, baking soda, salt, and cinnamon.
4. Add dry ingredients to wet ingredients. Stir gently until just combined. Do not overmix.
5. Fold in 3/4 cup chocolate chunks. Reserve the rest for topping.
6. Divide batter evenly among mini loaf pans, filling about 3/4 full. Top with remaining chocolate chunks and thin banana slices.
7. Bake mini loaves 25-30 minutes or a standard loaf 50-60 minutes. Check with a toothpick, it should come out with a few moist crumbs.
8. Cool in pans 10 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Moist Banana Bread Loaf


Ingredients
3 ripe bananas mashed about 1 1/2 cups
1/3 cup melted butter
3/4 cup brown sugar packed
1 large egg beaten
1 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 1/2 cups all purpose flour

Preparation
Preheat oven to 175C. Grease and line 9x5 inch loaf pan with parchment.
Mash bananas in bowl until smooth. Stir in melted butter.
Add brown sugar, beaten egg, and vanilla. Mix until combined.
Sprinkle baking soda and salt over mixture. Stir in.
Add flour and stir just until no dry streaks remain. Do not overmix.
Pour batter into prepared pan and smooth top.
Bake 55 to 65 minutes until toothpick inserted comes out clean or with few moist crumbs.
Cool in pan 10 minutes then transfer to wire rack.

Let bread rest 1 hour before slicing for clean cuts. Stays moist 4 days at room temperature or freeze up to 3 months.

1. Grilled Chicken Avocado Sandwich
Ingredients
2 slices bread or ciabatta
1 grilled chicken breast sliced
1/2 avocado sliced
Tomato slices
Lettuce
2 tbsp ranch dressing

Preparation
Toast bread. Spread ranch on both sides. Layer lettuce, tomato, chicken, and avocado. Pack with chips and grapes.

2. Ham and Swiss Lunch Sandwich
Ingredients
2 slices whole grain bread
3 slices ham
2 slices Swiss cheese
Tomato slices
Spinach leaves
1 tbsp honey mustard

Preparation
Spread honey mustard on bread. Layer cheese, ham, tomato, and spinach. Pack with pickle and grapes.

3. Tuna Avocado Sandwich
Ingredients
1 can tuna drained
2 tbsp mayo
1 tbsp diced celery
1/2 avocado sliced
Tomato and cucumber slices
2 slices bread

Preparation

Lotus Biscoff Cake


Ingredients
For the cake
1 1/2 cups all purpose flour
1/2 cup Biscoff cookie crumbs
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter softened
3/4 cup granulated sugar
2 large eggs room temperature
1/2 cup Biscoff spread melted
1/4 cup buttermilk
1 tsp vanilla extract

For the Biscoff frosting
8 oz cream cheese softened
1/2 cup Biscoff spread
1/2 cup unsalted butter softened
2 cups powdered sugar sifted
1/4 tsp salt

For decoration
1/2 cup Biscoff cookie crumbs
Lotus Biscoff biscuits

Preparation
Preheat oven to 175C. Grease and line 8 inch round pan.
Whisk flour, Biscoff crumbs, baking powder, baking soda, and salt.
Beat butter and sugar 4 minutes until fluffy. Add eggs one at a time, then vanilla.
Mix in melted Biscoff spread. Add dry ingredients alternating with buttermilk. Mix until just combined.
Pour batter in pan and bake 30 to 35 minutes until toothpick comes out clean. Cool completely on rack.

For frosting, beat cream cheese, butter, and Biscoff spread until smooth. Add powdered sugar and salt. Beat 3 minutes until fluffy.

Slice cake into 2 layers. Spread frosting between layers and over top. Pipe swirls on edge if desired.
Press Biscoff crumbs on sides and top edge. Place whole Biscoff biscuit in center.

Chill 30 minutes before slicing. Cake stays moist 4 days in fridge.

Split croissants in half without breaking through. Fill with ingredients. Top with cheese and broil 2 minutes until melted. Add herbs on top.

1. Ham and Swiss Croissant
Ingredients
Croissant
4 slices ham
3 slices Swiss cheese
Butter for brushing
Parsley chopped

Preparation
Layer ham and cheese inside croissant. Brush top with butter. Broil until cheese melts. Sprinkle parsley.

2. Buffalo Chicken Croissant
Ingredients
Croissant
1 cup shredded cooked chicken
2 tbsp buffalo sauce
1/2 cup mozzarella shredded
Chives chopped

Preparation
Toss chicken with buffalo sauce. Fill croissant and top with mozzarella. Broil 2 minutes. Garnish with chives.

3. Turkey Club Croissant
Ingredients

4 slices turkey
2 slices bacon cooked
1 slice cheddar
Lettuce and tomato
1 tbsp mayo

Preparation
Layer lettuce, tomato, turkey, cheddar, and bacon. Add mayo. No broil needed.

- 400g sirloin or ribeye steak, 2 cm thick

For the creamy garlic sauce:
- 1/2 cup mayonnaise

- 1 tsp Worcestershire sauce
- 1/2 tsp smoked paprika
- Salt and pepper to taste

Preparation method:
1. Make the sauce: Whisk mayonnaise, Dijon mustard, lemon juice, minced garlic, Worcestershire sauce, and paprika in a bowl. Season with salt and pepper. Chill until ready.
2. Caramelize onions: Heat 2 tbsp olive oil in a skillet over medium-low heat. Add sliced onion and sugar. Cook 20-25 minutes, stirring often, until deep golden and soft. Set aside.
3. Pat steak dry and season with salt and pepper. Heat 1 tbsp olive oil in a cast iron pan over high heat until smoking. Add steak and sear 3 minutes per side for medium-rare.
4. In the last minute, add butter and smashed garlic. Baste steak with melted butter. Rest steak 10 minutes, then slice thinly against the grain.
5. Split baguette lengthwise and spread with butter. Toast cut-side down in the pan 2 minutes until golden.

Ingredients:
For the meatballs:
- 500g ground beef, 85/15 fat ratio
- 1/3 cup breadcrumbs
- 1 large egg
- 1/4 cup milk
- 1 small onion, finely minced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp dried oregano
- 2 tbsp olive oil for frying

For the skillet:
- 3 medium yellow potatoes, cut into large chunks
- 1 red bell pepper, cut into large chunks
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1 1/2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp fresh parsley, chopped for garnish

Preparation method:
1. Make meatballs: In a large bowl, combine ground beef, breadcrumbs, egg, milk, minced onion, garlic, salt, pepper, paprika, and oregano. Mix gently until just combined. Roll into 16 golf ball-sized meatballs.
2. Heat 2 tbsp olive oil in a large oven-safe skillet over medium-high heat. Brown meatballs on all sides, about 6-8 minutes total. They do not need to be cooked through. Transfer to a plate.
3. In the same skillet, add potatoes and red pepper chunks. Season with salt and pepper. Cook 5 minutes, stirring once, until lightly browned.
4. Stir in tomato paste and cook 1 minute. Pour in beef broth and Worcestershire sauce. Add thyme and scrape the bottom of the pan.

Cheese Stuffed Italian Meatloaf

Ingredients
ground beef 2 lbs 85% lean
italian sausage 1/2 lb casings removed
yellow onion 1 small finely diced
garlic 3 cloves minced
olive oil 1 tbsp
eggs 2 large
breadcrumbs 3/4 cup italian seasoned
whole milk 1/3 cup
grated parmesan 1/2 cup
tomato paste 2 tbsp
dried oregano 1 1/2 tsp
dried basil 1 tsp
salt 2 tsp
black pepper 1 tsp
fresh parsley 1/4 cup chopped
mozzarella cheese 8 oz block cut into thick sticks
marinara sauce 1 1/2 cups
shredded mozzarella 1 cup for topping
red bell pepper 1/4 cup diced for topping
fresh parsley for garnish

Preparation method
Preheat oven to 375F. Line a baking sheet with parchment or use a 9x5 inch loaf pan.
Heat olive oil in a skillet over medium heat. Add onion and cook 4 minutes until soft. Add garlic and cook 1 minute. Cool slightly.
In a large bowl combine ground beef, sausage, eggs, breadcrumbs, milk, parmesan, tomato paste, oregano, basil, salt, pepper, parsley and cooked onion mixture. Mix gently with hands until just combined. Do not overmix.
On parchment, press half the meat mixture into a 10x8 inch rectangle. Place mozzarella sticks down the center lengthwise. Top with remaining meat mixture and seal edges well to enclose cheese. Shape into a loaf.
Transfer to baking sheet or loaf pan. Spread 1/2 cup marinara sauce over top. Bake 40 minutes.
Remove and spoon remaining marinara over loaf. Sprinkle with shredded mozzarella and diced red bell pepper. Bake 15 to 20 minutes more until internal temperature reaches 160F and cheese is bubbly.
Rest 10 minutes before slicing. Garnish with fresh parsley.

Ingredients:
For the dough, makes one 35 cm pizza:
- 2 1/4 cups all purpose flour
- 1 tsp instant yeast
- 1 tsp sugar
- 3/4 tsp salt
- 3/4 cup warm water
- 2 tbsp olive oil

For the toppings:
- 1/2 cup pizza sauce or marinara
- 2 cups shredded mozzarella cheese
- 1/2 cup pepperoni slices
- 120g Italian sausage, cooked and crumbled
- 1/2 cup sliced mushrooms
- 1/4 cup green bell pepper, thinly sliced
- 1 tbsp olive oil for brushing crust
- 1/2 tsp dried oregano, optional

Preparation method:
1. Make the dough: Mix flour, yeast, sugar, and salt in a bowl. Add warm water and olive oil. Stir until a shaggy dough forms. Knead on a floured surface 5-7 minutes until smooth and elastic.
2. Place dough in an oiled bowl, cover, and let rise 1 hour or until doubled.
3. Preheat oven to 250C / 480F. If you have a pizza stone or steel, place it in the oven while it heats.
4. Cook sausage in a pan over medium heat until browned, 5 minutes. Drain fat and set aside.
5. Punch down dough. Roll or stretch into a 35 cm circle on parchment paper. Transfer to a baking sheet or pizza peel.
6. Spread pizza sauce over dough, leaving a 2 cm border. Top evenly with mozzarella, then pepperoni, cooked sausage, mushrooms, and green pepper.
7. Brush crust edge with olive oil. Sprinkle oregano on top if using.
8. Bake 10-12 minutes until crust is golden and cheese is bubbly and lightly browned. Rotate halfway for even cooking.
9. Cool 3 minutes, slice, and serve hot.

Classic Meat and Cheese Lasagna

Ingredients
olive oil 2 tbsp
yellow onion 1 large diced
garlic 4 cloves minced
ground beef 1 lb
italian sausage 1 lb casings removed
crushed tomatoes 28 oz can
tomato paste 6 oz can
tomato sauce 15 oz can
dried basil 2 tsp
dried oregano 1 tsp
sugar 1 tbsp
salt 2 tsp divided
black pepper 1 tsp divided
red pepper flakes 1/4 tsp optional
fresh parsley 1/4 cup chopped plus more for garnish
lasagna noodles 12 sheets regular or oven ready
ricotta cheese 15 oz whole milk
egg 1 large
grated parmesan 1 cup divided
low moisture mozzarella 4 cups shredded divided
water 1/2 cup

Preparation method
Heat olive oil in a large pot over medium heat. Add onion and cook 5 minutes until soft. Add garlic and cook 1 minute.
Add ground beef and sausage. Break up meat and cook 8 to 10 minutes until browned. Drain excess fat.
Stir in crushed tomatoes, tomato paste, tomato sauce, basil, oregano, sugar, 1 tsp salt, 1/2 tsp pepper and red pepper flakes. Simmer 20 minutes on low. Stir in parsley.
If using regular noodles, boil in salted water until al dente. Drain and lay flat. Skip this step for oven ready noodles.
Preheat oven to 375F.
Mix ricotta, egg, 1/2 cup parmesan, remaining 1 tsp salt and 1/2 tsp pepper in a bowl.
Spread 1 cup meat sauce in a 9x13 inch baking dish. Layer 3 noodles, 1/3 ricotta mixture, 1 cup mozzarella, 1 1/2 cups meat sauce. Repeat layers two more times.
Top with final 3 noodles, remaining sauce, remaining mozzarella and remaining 1/2 cup parmesan. Pour water around edges of pan to help noodles cook.
Cover with foil and bake 25 minutes. Uncover and bake 20 to 25 minutes more until bubbly and golden.
Rest 15 minutes before slicing. Garnish with fresh parsley.
