Ultimate Grilled Spiced Chicken with Peppers, Onions & Fluffy Rice ๐๐ถ๏ธ

Ingredients :
For the rice
๐ 1ยฝ cups long-grain white rice or basmati rice
๐ง 2ยผ cups water
๐ง ยฝ teaspoon salt
๐ง 1 teaspoon butter or oil, optional
For the spiced chicken
๐ 1ยฝ lb boneless, skinless chicken breasts or tenders

For the peppers and onions

1 large yellow onion, sliced

Instructions :
Cook the rice. Rinse the rice until the water runs mostly clear, then combine it with water, salt, and butter or oil in a saucepan. Bring to a boil, cover, reduce to low, and cook for 15โ18 minutes, then rest covered for 5 minutes before fluffing.
Season the chicken. Pat the chicken dry and toss it with olive oil, lemon juice, garlic, paprika, oregano, thyme, salt, pepper, and optional chili flakes. Let it marinate for 10โ15 minutes while the rice cooks.
Preheat the grill pan. Heat a grill pan or heavy skillet over medium-high heat for 3โ5 minutes. The pan should be hot enough to create dark sear marks.
Grill the chicken. Cook the chicken for 4โ6 minutes per side, depending on thickness, until charred in spots and the thickest piece reaches 165ยฐF / 74ยฐC.
Rest and slice. Transfer the chicken to a plate and rest for 5 minutes. Slice into thick strips if using whole breasts, or leave tenders whole like the photo.
