Garlic Butter Chicken Fettuccine in cheesy Parmesan
Ingredients:
12 oz fettuccine
2 tbsp olive oil
1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
4 tbsp unsalted butter
1 tsp Italian seasoning
1 tsp garlic powder
½ tsp onion powder
½ tsp smoked paprika
½ tsp salt
½ tsp black pepper
6 garlic cloves, minced
2 cups heavy cream
½ cup chicken broth
4 oz cream cheese, softened
1½ cups freshly grated Parmesan cheese
1 cup shredded mozzarella cheese
¼ to ½ cup reserved pasta water
2 tbsp chopped fresh parsley
Directions:
Cook the fettuccine in a large pot of salted boiling water until al dente. Reserve about ½ cup of the pasta water before draining, then set the pasta aside.
Season the chicken with the Italian seasoning, garlic powder, onion powder, smoked paprika, salt, and black pepper until evenly coated.
Heat the olive oil in a large skillet over medium-high heat. Cook the chicken for 6 to 8 minutes until deeply golden with lightly crisp edges. Add 2 tablespoons of the butter and 4 minced garlic cloves, stirring for about 1 minute until the garlic becomes fragrant and the chicken is coated in rich garlic butter. Transfer the chicken to a plate, keeping the garlic butter in the skillet.
Melt the remaining 2 tablespoons of butter in the same skillet over medium heat. Add the remaining garlic and cook for 30 seconds, then pour in the heavy cream and chicken broth. Stir in the cream cheese until completely smooth.
Gradually add the Parmesan, followed by the mozzarella, stirring continuously until the cheeses melt into a thick, glossy cream sauce. If needed, stir in a splash of the reserved pasta water until the sauce is silky while remaining rich enough to cling to the pasta.
Add the cooked fettuccine to the skillet and gently toss for 2 to 3 minutes until every strand is completely coated in the creamy Parmesan sauce.
Spoon the creamy fettuccine onto serving plates and arrange the garlic butter chicken over the top or alongside the pasta. Drizzle the remaining garlic butter from the skillet over the chicken, sprinkle with chopped parsley, and serve immediately while the sauce is hot, creamy, and loaded with melted cheese.
