I’m hanging onto tomato season for as long as I possibly can, and this Puff Pastry Tomato Tart is a very good reason why.
Ripe tomatoes are layered over creamy ricotta with Parmesan, lemon zest and olives, then baked on puff pastry until the edges are crisp, flaky and deeply golden. A handful of fresh basil goes on at the end.
It’s one of those recipes that looks like you worked much harder than you actually did. Serve it warm with a simple salad for dinner, or cut it into smaller pieces for an appetizer.
And if you still have beautiful tomatoes at the market—this is what I’d do with them. Recipe here - https://almost-martha.com/recipe-catalog/f/puff-pastry-tomato-tart
