Crispy Nigerian Beef Samosas

Makes: 20–24 medium samosas

Ingredients

For the Dough

- 3 cups (375 g) all-purpose flour

- ½ tsp salt

- 4 tbsp (60 g) butter or margarine

- ¾–1 cup (180–240 ml) water

For the Beef Filling

- 300 g minced beef

- 1 medium onion, finely chopped

- 1 large carrot, finely diced

- ½ cup green peas

- 2 garlic cloves, minced

- 1 tsp grated ginger

- 1 tsp curry powder

- ½ tsp dried thyme

- ½ tsp black pepper

- 1 seasoning cube, crushed

- Salt, to taste

- 2 tbsp vegetable oil

Sealing Paste

- 2 tbsp all-purpose flour

- 3 tbsp water

For Frying

- Vegetable oil

Directions

1. Combine the flour and salt in a large bowl. Add the butter and rub it into the flour until the mixture resembles fine crumbs.

2. Gradually pour in the water, mixing until a soft dough forms. Knead until smooth, then cover and let it rest for 30 minutes.

3. Warm the vegetable oil in a frying pan over medium heat. Cook the onion, garlic, and ginger until fragrant.

4. Add the minced beef and cook until fully browned, breaking it apart as it cooks.

5. Stir in the carrot, peas, curry powder, thyme, black pepper, seasoning cube, and salt. Cook until the vegetables are tender and the filling is dry. Remove from the heat and cool completely.

6. Divide the dough into small pieces and roll each one into a thin circle.

7. Slice each circle in half to make two semicircles.

8. Mix the flour and water to create a thick paste for sealing.

9. Roll each semicircle into a cone and seal the side edge with the flour paste.

10. Fill each cone with about 1 tablespoon of the cooled beef mixture.

11. Seal the top edge firmly using more flour paste.

12. Heat oil to 170–175°C (340–350°F) and fry the samosas in batches for 5–7 minutes, turning occasionally until they are crisp and golden.

13. Drain on paper towels before serving.
