Creamy Coconut Pavê 🥥🤍
Creamy Coconut Pavê is a chilled Brazilian-style layered dessert made with soft cookies, silky coconut cream, and plenty of coconut. It’s rich, refreshing, and perfect when you want an easy no-bake dessert.
Ingredients
For the Coconut Cream
- 1 can (14 oz) sweetened condensed milk
- 1 can (13.5 oz) coconut milk
- 2 cups whole milk
- 3 tablespoons cornstarch
- 2 egg yolks
- 1 teaspoon vanilla extract
- 1 cup shredded coconut
- ½ cup heavy cream
For the Layers
- 1 package (7–8 oz) Maria cookies or vanilla tea biscuits
- ¾ cup milk, for dipping
- ½ teaspoon vanilla extract
For the Topping
- 1 cup whipped cream
- ½ cup shredded or toasted coconut
Instructions
1. Make the coconut cream: In a saucepan, whisk together the condensed milk, coconut milk, whole milk, cornstarch, and egg yolks until smooth.
2. Cook over medium-low heat, stirring constantly, until the mixture becomes thick and creamy, about 7–10 minutes.
3. Remove from the heat and stir in the vanilla and shredded coconut. Let the cream cool for about 10 minutes, then fold in the heavy cream.
4. Prepare the cookies: Combine the milk and vanilla in a shallow bowl. Quickly dip each cookie into the milk. Don’t soak them too long or they may become mushy.
5. Assemble the pavê: Spread a thin layer of coconut cream in the bottom of an 8x8-inch dish. Add a layer of dipped cookies, followed by another generous layer of coconut cream.
6. Continue layering cookies and coconut cream until all the ingredients are used, finishing with coconut cream on top.
7. Spread whipped cream over the final layer and sprinkle generously with shredded or toasted coconut.
8. Cover and refrigerate for at least 4–6 hours, or preferably overnight. This gives the cookies time to soften into a cake-like texture.
9. Serve cold and garnish with extra coconut if desired.
