4 thick cod fillets (or any firm white fish like halibut or sea bass)

2 tbsp olive oil

2 tbsp butter

3 cloves garlic, minced

½ cup heavy cream

¼ cup chicken or vegetable broth

2 tbsp fresh lemon juice

1 tbsp fresh parsley, finely chopped

1 tbsp fresh chives, finely chopped

½ tsp paprika

Salt and freshly cracked black pepper to taste

Instructions

Season the Fish: Pat the cod fillets completely dry with paper towels. Season both sides generously with salt, black pepper, and a light dusting of paprika for color and flavor.

Sear the Fillets: Heat the olive oil in a large skillet over medium-high heat. Once hot, add the cod fillets. Sear undisturbed for 3–4 minutes until a beautiful golden-brown crust forms on the bottom. Carefully flip the fish and sear the other side for an additional 2–3 minutes. Remove the fillets from the skillet and set aside on a clean plate.

For the Tangy Glaze:

½ cup ketchup

2 tbsp brown sugar

1 tbsp apple cider vinegar

For the Roasted Potatoes:

1½ lbs (680 g) baby red or russet potatoes, cubed

2 tbsp olive oil

1 tsp dried Italian seasoning (or rosemary and thyme)

Salt and garlic powder to taste

Instructions

Mix and Shape the Meatloaf: In a large bowl, combine the ground beef, breadcrumbs, diced onion, minced garlic, eggs, milk, Worcestershire sauce, salt, and black pepper. Mix gently until just combined (do not overwork the meat). Shape the mixture into a compact, even loaf.

Season the Potatoes: In a separate bowl, toss the cubed potatoes with olive oil, Italian seasoning, salt, and garlic powder until evenly coated.

Whisk the Glaze: In a small bowl, stir together the ketchup, brown sugar, and apple cider vinegar until smooth. Brush half of this tangy glaze over the top and sides of the shaped meatloaf.

Assemble the Slow Cooker: Create an aluminum foil liner or foil boat inside your slow cooker to help lift the finished meal easily. Place the glazed meatloaf in the center of the slow cooker, and arrange the seasoned potatoes all around the sides of the loaf.

Instructions

Instructions

Shape the Steaks: Divide the ground beef into 4 equal portions and shape them into thick, oval patties. Season both sides with salt and black pepper.
