π©βπ³ Instructions
1οΈβ£ Prepare Everything π€π
Pat the shrimp dry with paper towels.
Slice the smoked beef sausage into thick rounds and chop the onion, garlic, and green onions.
Break apart any clumps in the cold rice. πβοΈ Day-old chilled rice works best because it stays fluffy instead of becoming mushy.
2οΈβ£ Brown the Sausage ππ₯
Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
Add the sausage and cook for 3β4 minutes, turning occasionally, until browned and slightly crispy around the edges.
Transfer to a plate.
3οΈβ£ Cook the Shrimp π€
Add the shrimp to the same hot skillet.
Cook for about 1β2 minutes per side, until pink, opaque, and just cooked through.
Remove and place with the sausage. Don't overcook the shrimp! β€οΈ
4οΈβ£ Scramble the Eggs π₯π³
Add the butter to the skillet.
Pour in the beaten eggs.
Gently scramble until just set, then push them to one side of the skillet.
5οΈβ£ Add the Garlic & Onion π§π§
Add the remaining tablespoon of oil.
Add the diced onion and cook for 2β3 minutes until slightly softened.
Stir in the garlic and cook for about 30 seconds until fragrant. π
6οΈβ£ Fry the Rice ππ₯
Add the cold cooked rice to the skillet.
Spread it across the hot surface and cook for 3β4 minutes, tossing occasionally.
Pour in the soy sauce, oyster sauce, and sesame oil. π₯’
Add the black pepper and red pepper flakes if you like a little heat. πΆοΈ
Toss everything together until the rice is hot, evenly seasoned, and lightly toasted.
7οΈβ£ Bring Everything Together π
Return the browned sausage and shrimp to the skillet.
Mix them into the rice and scrambled eggs.
Cook for another 1β2 minutes, tossing gently until everything is piping hot. π₯
8οΈβ£ Finish & Serve π±
Turn off the heat and sprinkle generously with chopped green onions.
Taste and add a little salt only if necessary.
Spoon onto a big serving plate and serve immediately! π½οΈπ
