At the heart of this evening is a story of culture, stewardship, and the Columbia River. For thousands of years, Native American tribes have honored and protected the king salmon through traditions rooted in respect for the river and its abundance.
This dinner is inspired by that enduring legacy.

Meet Chef Francisco from Camino Restaurant Camino (Mexican Brunch)
For Chef Francisco, cooking is more than a craft—it’s his way of telling a story. Through Camino, he invites guests to experience Mexican cuisine from a fresh perspective, where every ingredient carries meaning and every dish reflects culture, tradition, and connection.
At Rooted in River & Vine, Chef Francisco will present two vibrant interpretations of Columbia River King Salmon:
• Smoked Salmon con Mole Blanco with asparagus, broccolini, white rice, onions, and blue tortilla.
• Salmon Ceviche Tostada with cucumber, jícama, orange, red onion, cilantro, and a vibrant house sauce.
His courses celebrate the richness and diversity of Mexican cuisine while honoring one of the Pacific Northwest’s most treasured ingredients.
Meet Chef Hiroshi Kozawa from Hiroshi Table
Chef Hiroshi brings us a celebration of Japanese tradition, precision, and hospitality.
Born and raised in Japan, Chef Hiroshi has spent more than 30 years sharing authentic Japanese cuisine throughout Oregon.
His philosophy is beautifully simple: allow exceptional ingredients to speak for themselves.
Chef Hiroshi’s courses are one chapter in an evening celebrating the many ways culture, technique, and tradition can transform a single remarkable ingredient!
