🍯🔥 Hot Honey Ground Turkey & Delicata Squash Bowls
(aka autumn in a bowl)
When fall hits, you want cozy, sweet-meets-spicy, and a dinner that looks like it belongs on a fall postcard. This one delivers. Featuring locally grown delicata squash from (this week’s veggie focus!), hot honey ground turkey, and your choice of Brussels sprouts, kale, or broccolini.
You can find Davis Natural Produce veggies 7 days a week at International Mountain Equipment NOCO (10a–6p) and on Saturdays at Tuckerman Brewery in Conway (3–6p). 🍂
Ingredients (serves 4)
1 lb ground turkey
1 medium delicata squash (about 1 lb), halved, seeded, sliced into half-moons
1 medium red onion, cut into wedges
2 cups Brussels sprouts (halved) or kale (chopped) or broccolini (trimmed)
2 tbsp olive oil
1 tsp smoked paprika
½ tsp cinnamon
Salt & black pepper
Hot honey glaze:
¼ cup honey
1–2 tsp hot sauce (to taste)
1 tbsp apple cider vinegar
1 clove garlic, grated
Optional garnishes: goat cheese or feta, crispy sage, toasted pumpkin seeds
Directions
1️⃣ Roast veggies: Preheat oven to 425°F. Toss squash, onion + your veggie of choice with oil, paprika, cinnamon, salt & pepper. Roast 20–25 min, flipping halfway.
2️⃣ Cook turkey: Brown turkey in a skillet, season with salt & pepper.
3️⃣ Hot honey glaze: Whisk honey, hot sauce, vinegar & garlic. Stir half into the turkey, let it coat and reduce slightly. Save the rest for drizzling.
4️⃣ Assemble bowls: Divide veggies + turkey, drizzle with glaze, add garnishes.
