SAVE THIS RECIPE 🌿 Grilled Sausage & Fennel Foil Packs

If fennel is one of those vegetables you’ve seen but weren’t quite sure what to do with, this is an easy place to start.

This week’s Swift River CrossFit x Davis Natural Produce recipe pairs fresh local fennel with sausage, potatoes, peppers, onion, lemon, and garlic—all cooked together on the grill.

BARE-BONES RECIPE:
1 fennel bulb
1 lb Italian sausage
1 lb baby potatoes
1 bell pepper
1 small onion
2 tbsp olive oil
1 tbsp Dijon
1 tbsp lemon juice
2 garlic cloves
Italian seasoning + salt + pepper

Microwave the quartered potatoes for 4–5 minutes to give them a head start.
Toss everything together, divide among 4 foil packets, seal, and grill at about 400°F for 20–25 minutes, flipping once.

Finish with lemon + chopped fennel fronds.

We got a pretty loaded week coming up: our first round of Pub Trivia is taking place this Thursday. It covers all topics under the sun and is free to play with sign up starting at 5:30pm.

If you're around this weekend, Shark Martin takes the stage Friday 4-7pm, Hambone is back on Saturday 4-7pm, and Chimera wraps up the weekend Sunday 4-7pm.

Davis Natural Produce will have a farm stand set up in the beer garden again this Friday. This is also the last week of the MWVEG - Mount Washington Valley Eaters & Growers fundraiser, where a portion of the proceeds of all veggie pizzas sold in August will go towards their local access fund, helping supply fresh food to local families in need.

SAVE THIS RECIPE!

Not sure what to do with fresh eggplant?
These Mediterranean Stuffed Eggplants have ground turkey, fresh tomatoes, garlic, feta, herbs, and a lemony Greek yogurt drizzle. They're hearty enough for dinner but still feel like summer.

BARE-BONES RECIPE:
🍆 Halve 2 eggplants, brush with olive oil + roast at 425°F for 25–30 min.
🍅 Brown 1 lb ground turkey with diced onion. Add garlic, 2 diced tomatoes, oregano, smoked paprika + cumin.
🥄 Scoop some roasted eggplant into the turkey mixture. Add feta + parsley.
🔥 Stuff the eggplant halves and bake another 8–10 min.
🍋 Top with Greek yogurt mixed with lemon, garlic + a pinch of salt.

SAVE THIS RECIPE 🥕
This week’s veggie focus is carrots, and this one is about as easy as it gets: Honey Thyme Roasted Carrots and Green Beans.

And before anyone worries about the honey — it’s just 2 teaspoons for the whole pan. Enough to help the carrots caramelize a little, but not enough to turn dinner into dessert.

This recipe is part of the Swift River CrossFit x Davis Natural Produce summer recipe partnership.

Bare-bones recipe:
1 lb carrots, sliced
12 oz green beans, trimmed
2 tbsp olive oil
2 tsp honey
1 tsp fresh thyme
1/2 tsp salt
1/4 tsp black pepper

Toss everything together, spread it on a sheet pan, and roast at 400°F for 20–25 minutes, stirring once halfway through.

Simple, fresh, and good with just about anything you’re cooking for dinner.
