Guys… I just created some of the lightest corn muffins I’ve ever had! They may not last until dinner…
I started by preheating the oven to 350 (I used convection). Then, in one bowl, I combined 1/3 cup brown sugar, 1/3 cup honey, 2 eggs, and 1 3/4 cups heavy whipping cream. In another bowl, I combined 1 1/4 cups flour, 3/4 cups corn meal, 1 TBSP baking powder, and a 1/2 teaspoon of salt. I added the dry to the wet and stirred until just mixed. I filled standard cupcake tins, lined with cupcake liners, just over halfway and baked for 18 minutes. Yummy! These are going to go great with the chili I’ve been cooking all day!

Pi Day is coming up! So, I thought this to be the perfect time to share my pie crust recipe!

Pie Crust
2 3/4 cups all purpose flour
1 cup unsalted butter, frozen
3/4 tsp salt
1 TBSP sugar
7-8 TBSP ice water (have extra just in case)

Combine all the dry ingredients together. I use the dough hook on my Kitchenaid. Shred the frozen butter with a food processor or grate it with a cheese grater. Alternate adding the shredded butter with the ice water into the flour mixture. Add just enough ice water to form a dough. The butter should be marbled in the dough. Divide the dough in half, shape into disks, wrap in plastic wrap, and let it rest in the fridge for a minimum of 15 minutes (at this point it can be frozen for later use). Roll to a 1/4” thickness on a floured surface or silicone mat. Gently lay it in a lightly greased pie pan (I roll it up on the rolling pin to lift it or use the mat). Be careful not to pull or stretch the dough as you press it into the pan! Trim the edges (you can trim it 1/2” bigger than the pan and fold the excess under to create a thicker rim if you want). Flute the edge. For pies with pre baked crusts, preheat the oven to 450*. Prick the crust with a fork on the bottom and around the sides. Line the crust with foil or parchment paper and fill it with dried beans, whole grain rice, or pie weights. Bake for 10 minutes. Remove the beans and foil and bake for another 5-10 minutes.

Confession time… I don’t like pancakes. But, as with many things I don’t traditionally like, I’ve adapted a recipe into something I do like. My kids like them, too! Let me know if you do!

Picture Picture Pancakes!
2 tsp baking powder
1 TBSP sugar
1/4 tsp salt
1 tsp nutmeg
2 cups all-purpose flour
1 1/2 cups milk
1/2 cup heavy whipping cream
2 eggs

Combine all the dry ingredients in a mixing bowl. In another bowl, whisk together the eggs, milk, and cream. Pour the wet ingredients into the dry ingredients and use the whisk to combine the two until just mixed. Small lumps are fine. Heat a lightly greased skillet or frying pan on medium-low heat. Put a scoop of batter on the pan and allow to cook until it starts to bubble. Flip the pancake over and cook 1-2 minutes more. Remove from the pan and enjoy.

These freeze well and can be quickly warmed up in the microwave or toaster.

Easy Homemade Bagels!

3.5 cups bread flour
2 tsp instant yeast
1.5 tsp salt
4.5 tsp sugar
1 egg (room temperature)
1 1/4 cup water

Combine all the dry ingredients together in a mixing bowl using a dough hook on speed 2 (or by hand).
Add the egg to the dry ingredients and continue mixing at speed 2. Microwave water until very warm (about 1 minute) and gradually pour into bowl while mixer is still going. Add more flour if dough is sticky. Let the mixer knead the dough at speed 2 for 10 minutes. Remove the bowl from the mixer and allow the dough to rise for 15-20 minutes until double in size. Punch the dough down and let rest for 10 minutes. Divide the dough into 8 and shape into bagels. Place on a greased baking sheet and allow to rest while you preheat the oven to 425 and bring a large pot of water to a boil. Once the pot is boiling, add a few of the bagels at a time and boil for two minutes each side. Return to the baking sheet and bake for 20-25 minutes. Enjoy!

Anyone else have a drawer of scoops in your kitchen?? I use mine a lot! These don’t include the scoops I use for my business, these are just for home use. Any guesses on what I use these scoops for the most?

Here’s a hint- it’s not ice cream! The ice cream scoops are in a bin in the back of the drawer because I consider them a different tool.

60 (ish) Minute Dinner Rolls

4.5-5 cups bread flour
1/4 cup sugar
1 tsp salt
2 packages active dry yeast (or the equivalent)
1 cup water
1/2 cup milk
1/4 cup (1/2 stick) unsalted butter

Combine 4.5 cups of flour, sugar, salt, and yeast in mixer bowl with a dough hook on speed 2 (or by hand, if you don't have a mixer). If butter is softened, add to the dry ingredients. If not, add to the water and milk and microwave until very warm (I usually do 1:30). Pour into dry ingredients while mixer is still going. Add more flour, if needed. Once all ingredients are fully incorporated, set a timer for 10 minutes and let the mixer continue to knead the dough at speed 2, or do it by hand. Turn off the mixer, remove the dough hook, and set aside the dough in the bowl for 15-20 minutes (I use the proof setting on my oven). Shape into rolls and put into a greased pan. Allow them to rise again for 15-20 minutes. Preheat oven to 425 and bake for 15-20 minutes, depending on size. Optional- brush tops of baked rolls with butter immediately after removing from oven.

This recipe is one I base almost all of my yeast breads from. It's easy to change and adapt to my needs and I almost always have all these ingredients on hand. All-purpose flour can be used in place of bread flour, if that's what you have. The milk can be anything from heavy cream to skim, whatever you have on hand.
