I wanted to smoke a brisket this weekend but the weather here in Florida was just not cooperating. On rainy days like this I love to make this beautifully bright and delicious seafood soup from the Ligurian region of Italy, Ciuppin is known for its rich luxurious, fish and vegetable base. Here is the recipe.

Ingredients
EVOO from Olive Oil of the World
1 onion, chopped
1 carrot, chopped
2 celery stalks, chopped
3 garlic cloves, minced
1 bunch Fresh parsley minced
1 bunch Green onion chopped
16 oz shrimp peeled and deveined
2 Anchovie filets minced
1 cup white wine
Peeled or crushed tomatoes (about 16 oz)
Cherry tomatoes cut in half
16 oz Grouper cut into about 10 pieces
16 oz squid
24 oz water
Salt and pepper from palmbeachsalt
Sliced and toasted thick crusty from Bread by Johnny

Instructions
Chop the onion, carrot, and celery extra small dice.
Heat olive oil in a large pot over medium heat. Add the onion, carrot, celery, garlic, and parsley. Cook until softened and translucent
Salt and pepper
Pour in a white wine to deglaze and let it cook down 3/4 of the way.
Add tomatoes and water bring to boil
Use an immersion stick blender and blend the tomato together with the vegetables in the pot until you have a smooth silky consistency
Add the grouper
Add the shrimp
Add the squid
Add cherry tomatoes
Let simmer on low heat 20 mins
Ladle hot soup over bread
Garnish with parsley and green onion
Finish with a drizzle of extra virgin olive oil

Sometimes the best Italian dinners are the most simple. All of these ingredients from the pasta, to the tomatoes and even the cheese can be found at Olive Oil of the World! The paccheri pasta and tomatoes are imported from Napoli, cooked simply with garlic, evoo, and fresh basil from the garden finished with 24 month aged Parmigiano Reggiano, a little extra drizzle of Olio Trampolini EVOO and palmbeachsalt. I always grate the cheese onto the pasta after I take the photo.

I wanted to share another recipe from my days of working in Asian cuisine this time with something I made today for lunch. Its a labor of love but definitely worth it especially on rainy days like this in Florida. This is my recipe for Thai duck noodle soup made with Chinese five-spice and star anise. This rich umami broth will have you wanting to make this again and again.

Ingredients:
4 pieces bone-in duck hindquarters (legs and thighs)
4 cups chicken stock and 1 3/4cups water (or enough to submerge the duck)
2 star anise pods
1 cinnamon stick
2 slices fresh galangal or ginger
5 cloves garlic crushed
1.5 tsp Chinese five-spice powder
2 Tbsp soy sauce
2 Tbsp oyster sauce
1 Tbsp dark soy sauce
1 Tbsp fish sauce
2 Tbsp palm sugar or brown sugar in rock form
½ tsp ground white pepper
Thin rice noodles
Bean sprouts
Garlic infused evoo
Chopped cilantro and green onions for garnish

Instructions
-Combine the chicken stock, water, star anise, cinnamon stick, five-spice powder, galangal, and garlic in a large pot
-Stir in the soy sauce, fish sauce, oyster sauce, dark soy sauce, palm sugar, and white pepper. Bring the mixture to a gentle boil.
-Add the duck pieces into the simmering broth. -Lower the heat, cover with a lid, and let it simmer low and slow for 1.5 to 2 hours until the meat is fork-tender and falling off the bone.
-Remove the cooked duck from the pot. Pull the meat off the bones or slice it neatly into serving portions. Strain the broth if desired to remove loose spices.
-Boil your rice noodles separately until chewy, then drain well. Toss them immediately with a little garlic oil so they don't stick.
-Place a portion of noodles and a handful of fresh bean sprouts or greens into a serving bowl. Top with the tender duck meat. Ladle the hot, fragrant five-spice broth over everything. Garnish with chopped cilantro and green onions. Drizzle with a little bit of EVOO and enjoy! For more recipes visit www.OliveOilOfTheWorld.com

Given my background and the fact that I import and sell olive oil mostly from the Mediterranean most people always assume I worked in that kind of food my whole life as a chef.
Now it is true that growing up that is the kind of food that was cooked in our house most of the time but my parents definitely made sure we were exposed to lots of different food and after culinary school I found myself wanting to learn more. So I worked in Asian food the majority of my career. This is one of my favorite authentic dishes from Thailand Nam Sod salad it can be made with either chicken or pork. I've always liked to make it with chicken as it's much lighter and less fatty. Here is a very simple recipe for Chicken Nam Sod that you can make at home. I always like to eat mine with a side of white rice as you can see here because after you eat the salad there's all this great dressing left on the plate.

Ingredients
1 lb ground chicken (or finely chopped chicken thighs)
2 tbsp water (for cooking the meat)
3 tbsp fish sauce
3 green onions thinly sliced
4 tbsp fresh lime juice
5 tbsp fresh ginger, cut into thin matchsticks
2 shallots or 1/2 red onion, thinly sliced
2-3 fresh Thai chili peppers, finely sliced
1/4 cup fresh cilantro, chopped
1/4 cup fresh mint leaves, chopped
1/2 cup unsalted roasted peanuts
EVOO for drizzling
Crisp romaine lettuce leaves

Instructions
Cook the chicken: Heat a skillet or small pot over medium heat. Add the ground chicken and 2 tbsp of water. Cook for 5 to 7 minutes, breaking the meat apart until fully cooked through. Remove from heat and let it cool slightly
Mix the dressing: In a large mixing bowl, combine the fish sauce, lime juice, and sliced Thai chilis.
Combine ingredients: Add the warm or cooled cooked chicken, ginger matchsticks, shallots/red onion, cilantro, and mint to the bowl. Toss gently to combine all the flavors.
Garnish and serve: Top the mixture with crunchy roasted peanuts. Spoon the chicken salad into fresh lettuce cups and drizzle with a little EVOO to add extra nutrients and flavor
