Good morning from the Carlson Cross and Anchor Homestead birds! Everyone is nice and energetic today.

Finally got some guinea fowl keets! These were the birds we first wanted but they're always sold out. Lucky to have a local store who just happened to get some yesterday and I was there first think this morning. Now we have 8!

Made some homemade yogurt with homemade vanilla and pure maple syrup. None of that corn syrup stuff. Goes great with granola.

- 1 gallon milk in pot -> 180F then immediately cut heat.
- Cool milk -> 110F-115F and add yogurt culture. Can be store bought yogurt if it has ACTIVE CULTURES. Mix a little bit of warm milk and yogurt starter in separate dish.
- Mix yogurt starter in dish with warm milk in the pot.
- Incubate at around 110F for about 8hrs.
- After ~8hrs pull yogurt pot and place in fridge to set overnight (or 4-8hrs). DO NOT MIX IN FLAVORING YET!
- Once yogurt is set, test taste/smell/look and add flavoring.

- 4 teaspoons of vanilla
- 1 cup pure maple syrup

NO ADDED SUGAR NEEDED. Of course flavor to your liking though.
