Drew Cooks made this cheesy Beef and Rice taco bake look so good I had to try it! I was not disappointed- it is delicious and could not be any easier to make! I cut the recipe in half which was perfect for my empty nest house. We had enough for dinner and leftovers for lunch the next day.( 4 servings) If you have a bigger crowd just double up on the recipe.
How I made mine: prepare some taco meat according to your taco seasoning direction and set aside. (I did 1/2 ground beef cooked and drained, 2 tablespoons of taco seasoning- half a packet - 1/2 cup of water) into a 9x9 baking dish add 1 packet of Knorrs Taco Rice, 1/2 cup chicken broth, 1 cup of salsa of your choice ( 1/2 of a 16 once jar) and 1 cup of water. Stir it up then add your taco meat and top with shredded cheese (1-2 cups of cheese of your choice- we had cheddar so that's what we used) cover with foil and bake at 350 for 45 minutes. Pull it out of the oven and cover with warm queso - l used 1 cup or half of a 16 ounce container.
Pop it back in the oven uncovered for 5 minutes. (I put my oven on broil but I don't recommend it because the queso got a little toasty) I topped mine with green onion and sour cream. This was so good and the leftovers the next day were even better. This recipe can also be made with chicken, should I try it next?? Knorr
