Coffee grows slowly in the mountain jungles of Nicaragua, shaped by the land, the season and the people who care for it. During each harvest, Carlos returns to Nicaragua to spend time with growers, taste coffees and select the lots he is most excited to bring home. Catuai, Bourbon, Pacamara, Parainema, Geisha and more, each shaped by its genetics, where it’s grown, and the care behind every harvest. Meet Ibis Garcia, the farmer behind La Joya in Dipilto, Nicaragua. For Ibis, coffee production is a deeply personal, hands-on process. He oversees every stage himself, from planting and harvesting to processing, cupping and even sample roasting each coffee.

This seed-to-cup involvement allows Ibis to remain closely connected to his work and understand how every decision made on the farm shapes the final cup. His passion is especially evident in the diversity of coffee varietals he maintains, each offering an opportunity to explore new flavors and showcase the unique potential of La Joya. Sourced with intention. Hand-packed in Ojai. Every step shaped by human hands. 🌱 The work behind each bag begins long before the coffee reaches our roastery. After harvest ends in March, farmers continue caring for the land throughout the year—pruning plants, tending new seedlings, clearing weeds by machete, and nourishing the soil for the season ahead.

At this farm, Finca San Fernando, dried coffee cherries and husks are returned to the earth as natural fertilizer, carrying one part of the process into the next. That same attention continues in Ojai, where every coffee is roasted in small batches and packed by hand with care. From the first seedling to the finished bag, each step reflects the people, knowledge, and work behind the coffee.
