This morning I made Cheddar eggs and sautéed Asparagus.
Not something I will make on the trailer with the price of asparagus and short shelf life. But with enough demand I could.

This week we were able to finish up the electrical rough in. Had to make a change in the electrical do to codes. With that completed, next on the list is to complete the bathroom and then build the wall separating the bathroom from the kitchen. Once that is done it will go pretty fast…I think!
Tomorrow is a day off then will pick back up on it Monday morning…

Alright…We are on our way home to focus on getting the trailer finished and opened up so that we can start cooking.
At this point we are going to focus on breakfast and lunch but plan on offering Friday evening dinners.
We will start taking menu requests soon.
We decided not to go with any fried foods but baked or grilled. Potatoes options will be hash browns, baked fries or tater tot’s.

Just a quick update:
We had to put off the build for now but will finish it up in the fall and plan to be opening by winter. We appreciate everyone’s patience.

Due to unforeseen circumstances, we have put the trailer on hold until we get back in November.

This weekend I installed some roof insulation along with more wiring.
