What a beautiful Springfest weekend complete with #LightningStrikes! We competed in a dual MBN/KCBS event, and we were fortunate enough to make finals in Whole Hog and came out in first place! 🥇 We also executed another perfect 180 score in KCBS Ribs, which got us a 2nd place - tied for 1st! We were 15th overall in KCBS. We came in 8th in ribs on the MBN side. In the ancillaries, we were 3rd in exotic, 5th in beef, 6th in chili, and 9th in seafood. Not a bad warm-up weekend for MiM!

We finally made our way to the Midwest to compete with some of the best in the biz! Jeff and Kevin put on a great contest in Sioux City, IA!
Eric pulled off a 7th and 8th place, and Allen finished 12th! Huge congrats to Craig Carter on his steak sweep! ⚡️ 🧹#TeamWhiteLightning cleaned house and took away the majority of the calls and trophies for the day! Congrats to all on another job well done! Glad we were able to be a part of it!
We can’t say enough thank you’s for the hospitality we received - from a place to stay, to grills/tents/heaters etc (literally everything we needed to compete), to a Sunday morning home cooked breakfast! We couldn’t have made it work without you all!

Another SCA World Championship has come and gone! We had a great time in Ft Worth with all of #TeamWhiteLightning! We competed against over 500 total teams this year!
Eric placed 6th in his group in Anything Wampler's Farm Sausage in the prelim round, earning him a spot in the finals, where he came out 12th (tied for 11th)!
Allen finished 19th in his prelim steak group, and Eric finished 20th in his. They were just short of making it into the Steak Finals.
Big congrats go to Scott Nardi on his Steak World Championship and to Tom Perelka on his Ancillary World Championship!
Huge congrats to out to Tim Brown for securing Points Champion of the Year for the US 🇺🇸 and to Jay “Sheepy” Becker for winning Points Champ of Australia 🇦🇺! Way to go, guys! What an honor to have them both trust in our products to get the job done contest after contest!⚡️🌪
We were thrilled to award Mark “Doc” Johnson with the White Lightning Tomahawk Award for the highest finals finish amongst Team White Lightning! Thank you, Marcio, for the awesome tomahawk trophy 🏆

Just got home from Frozen Bones in Van Dyne, WI...Spent the day freezing my beanbag off, but I managed an 8th in steak after the roller coaster that is cooking steak in 2 degree weather in the snow, including keeping the steaks warm, grill warm, myself warm, etc... Jenn made an excellent chili, but the judges didn't agree....And we're going to do it again next weekend in Greendale. We're gluttons for punishment...

• Boars Night Out Championship BBQ #whitelightning - This rub is so good. I’m not sure how to describe it. More of a powder than a rub. #Sweet, #salty, with a hint of really #mild backend #heat. (My mouth just started watering thing of how good this would be on #popcorn!). Almost a 14.5 oz bottle that will last longer because of how #fine the seasoning is. Can’t wait to try the #butter and #garlic version from Lowe's Home Improvement.
• Dirty South BBQ Company, Mama's Rubs #HotMama is a good quality rub. I will definitely put this on ribs soon. Definitely a rub meant for pork. A little on the sweeter side with more heat than the White Lightning. Gave me a really nice color. Can’t wait to see how it looks on ribs and pulled pork!
• Weber Grills #ChicagoSteak #seasoning. We are huge fans of #montrealsteak and this is right in that ballpark. Really adds a familiar steakhouse taste to anything you put it on. Didn’t have time to marinate tonight and that didn’t matter a bit. Seasoning was just fine by itself. We use this and Montreal Steak on most of our #hotandfastcooks.

Now onto the cook. The Oklahoma Joe's Smokers #bronco has surprised me. I’ve smoked on it and grilled and all food has come out great. Really happy with this cooker and will definitely buy more #okj products from here out. #satisfied is an #understatement here.

Ribeye Steaks sous vide to 125 degrees. Seasoned with Boars Night Out Championship BBQ #spicywhitelightning Lisa's Family Table #steakrub Big Poppa Smokers #cashcow and some fresh rosemary.
Then off to the cast iron skillet to crust the outside with butter and more fresh rosemary.
Just one of our favorite ways to enjoy a good steak.
Start to finish on todays chicken practice. We used Springer Mountain Farms chicken thighs. We feel like they are the best on the market. We cooked this on the Oklahoma Joe's Smokers bronco. Soon it will be cooking in the OKJ Rider DXL. I have to say that this chicken was the best I have done to date. It was seasoned with Oakridge BBQ dominator rub, Boars Night Out Championship BBQwhite lighting, and Chef Dan Lane bbq rub. Brined with oakridge bbq game changer. Cooked on Wolf's Revenge BBQ wolf revenge racks. Fueled with our Better Wood Products lump charcoal and one piece of FLAME Grilling Products, INC Cherry wood. Glazed with Head Country original, @chef.dan_lane_ candy apple, and Blues Hog Tennessee Red.
I have to say I am getting ready for the The Kansas City Barbeque Society comps to begin up here in New England Region. Let the fun begin.

Homemade Filet-o-fish.
Maybe my favourite thing on the McDonald's menu, so wanted to recreate it.
Ingredients:
Neutral Oil (I used Vegetable Oil)
¾ cup plain/all purpose flour
¼ plain flour (for dusting fish)
¼ cup rice flour (makes it super crispy
1¼ tsp baking powder
2 tbs Boars Night Out White Lightening
1 cup of ice cold Stone & Wood Brewing Green Coast Lager
4x Brioche Buns
Tartare sauce
American cheddar slices
4x Hoki fish fillets
1x Lemon
Salt to taste
Method:
Preheat fryer to 170c/340f.
Take fish and dust with 1/4 cup of plain flour.
Take remaining flour, baking powder, white lightening and mix in a bowl.
Add your ice cold beer and stir.
Dunk fish into batter and throw straight into hot oil (the idea is the cold beer will shock the hot oil and create a super crispy texture)
Cook for 6 minutes or until a deep golden brown.
Place fish on a wire rack and salt right away allowing to rest for 2 minutes.
Squeeze lemon on to fried fish.
Toast your brioche buns in a pan and add a slice of cheese on the bottom bun.
Place fish on top of cheese and add a generous amount of tartare sauce.
Enjoy with a nice cold Green Coast lager.

Was so very worried it would be dry, but the Pit Barrel NZ junior worked its magic. Even boxing day pickings are moist and delicious. Will definitely bring this out again....with better photos next time!
Next on was The pit barrel cooker, with a reverse seared beef rump roast, with TFS The Beef Rub, The Black Rub and BNO white lightning double garlic. Pohutakawa chunks for smoke... Goodness me, bloody fantastic!
Last of our Christmas proteins, a whole pork loin! TFS The Pork Rub, Pohutakawa smoke and finished with a Spiced Rum Glaze finish!...
